Good morning all! This weekend I am catching up on a few things in the fiscal department. I am going to be working on summarizing our tax information for last year, which is never fun, even for someone that likes to organize. In fact, I usually find other things to do to avoid starting.
So to make my day a little brighter, I made some simple cookies with a St. Patrick’s day twist with the help of these little guys:
Mint Chocolate Chip Cookies
1/2 cup butter
2 eggs
3/4 cup brown sugar
3/4 cup sugar
2 1/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup mint chocolate chip candies
Preheat oven to 350 degrees. Cream together butter, eggs and sugars.
Mix dry ingredients in a separate bowl and combine into butter mixture. Add chocolate candies last. Roll into 1 1/2″ balls onto greased cookie sheet. Press a couple of chips on top of each cookie for decorative purposes. Bake for 8-10 minutes until golden brown. Let cool a few minutes before removing from sheet.
These cookies are soft and flavorful. Ok, now I have to go pull my tax file.
