- softened butter
- sugar
- brown sugar
- egg
- vanilla extract

- instant pistachio pudding mix

- chopped pistachio pieces

Instructions
Step 1 - Heat oven. Blend butter and sugars in a large mixing bowl or bowl of a stand mixer.
Step 2 - Once blended, add egg and mix well. Gradually blend in dry ingredients and food coloring.

Step 3 - Fold in chocolate chips and pistachios.
Step 4 - Once cookie dough is blended, prepare baking sheet.
Step 5 - Drop cookie dough balls onto prepared cookie sheet.
Step 6 - Bake until bottoms are golden brown and let cool on a wire rack.

Pistachio Pudding Cookies
Ingredients
- ¾ cup unsalted butter softened
- ¾ cup sugar
- ¼ cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 drop / dollop green food coloring
- ½ teaspoon salt
- 1 teaspoon baking soda
- 1 3.4 oz pkg Pistachio Pudding mix
- 1 ⅔ cup all purpose flour
- 1 cup white chocolate chips
- ½ cup chopped pistachio pieces
Instructions
- Heat oven to 350 degrees. Line your baking sheet(s) with parchment and set aside.
- In the bowl of a stand mixer, combine the sugar, brown sugar and softened butter. Cream until smooth, about 2-3 minutes.
- Add in the egg, vanilla and green food coloring - just a drop! You can always add more but we want a pale green color here. Mix until combined.
- Add in the salt, baking soda, pudding mix and flour. Mix until smooth. If your mixer is struggling, switch to the paddle attachment - the dough is thick.
- Add in the white chocolate chips and chopped pistachio pieces. Mix until incorporated.
- Scoop out a tablespoon of dough and roll into a ball. Place on the baking sheet about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are just slightly browned.
- Allow to cool completely.
