Ingredients for Grinch Cookies
- All-Purpose Flour.
- Baking Powder.
- Baking Soda.
- Cornstarch.
- Salt.
- Unsalted Butter. If you only have salted butter on hand, you can use that and consider reducing the salt in the recipe.
- Granulated Sugar.
- Egg.
- Sour Cream. This adds flavor and creaminess to the cookies.
- Vanilla Extract.
- Vanilla Frosting. I used storebought Pillsbury frosting from a can. You can make your own if you prefer.
- White Frosting. Get the kind that works for piping names on the cookies.
- Neon Green Gel Food Colroing To get the right color for the Grinch.
- Christmas Sprinkles. You will need heart-shaped sprinkles and then Christmas-themed sprinkles.

Equipment
- large bowl or bowl of stand mixer

How to Make Grinch Cookies
In a large mixing bowl, cream the butter and sugar until fluffy. Beat in the egg, vanilla, and sour cream.
Combine the flour, salt, baking powder, baking soda, and cornstarch in a bowl, then whisk them together.
Add the dry ingredients to the wet and mix on low until combined. Use your spatula to scrape down the bowl.
Shape the dough into a disk, cover it in plastic, and chill it for one hour.
Preheat oven to 375º F. Roll the dough to ¼ inch, then use a 2-inch circular cookie cutter to cut the cookies. You may use any round cookie cutter or biscuit cutter, knowing this will affect the size and number of cookies. Reroll the scraps and cut the remaining cookies.
Transfer cookies to parchment-lined cookie sheet and bake cookies 8-10 minutes. Remove with a baking spatula to a cooling rack. Cool completely.
Decorating the Grinch Cookies
While the cookies are cooling, color the icing. Mix the vanilla icing with two drops of neon green food gel. Mix well.
Ice cookies cool baked cookies with a butter knife or a small spatula. Top with sprinkles and place a candy heart on the top of each cookie.
Tips for the Best Results
Do not overbake these cookies. For perfect cookies, preheat the oven fully. Set a timer for the cookies. Remove them promptly when the timer goes off.
If you don't preheat the oven or set a timer, pull the cookies out as soon as they set up and are just barely shiny on top. Cookies should not be baked until they look done unless you enjoy hard cookies.
Cool the cookies on the tray for a couple of minutes before moving the cookies to a cooling rack. This allows them to set up slightly as they finish cooking.
Make sure your cookies are completely cool before frosting them. Otherwise, the frosting will melt and run off of the cookie.
Have a partner work with you to add sprinkles as you frost the cookies so that the frosting doesn't set up before you get back to add the decorations.
While the cookies themselves are made from scratch, you can use store-bought frosting for fast and easy decorating once the cookies bake
Store in an airtight container.
