Ingredients for easy pistachio cream pie
- Melted Butter – This holds the pie crust together and gives the chocolate Oreos an extra flavor burst.
- Pie Crust – You can make a simple pie crust with Oreo cookies and butter, or you can buy a premade cookie crust. This Chocolate Graham Cracker Crust would also work well.
- Ice Cream –Pistachio ice cream is what we use for this, although you could easily substitute it with mint chip ice cream too.
- Whipped Cream – I like to make my own whipped cream, but you can use a canned version if you wish.

Tips for best results
- Achieve an Even Crust: Crush the Oreo cookies in a food processor to create fine crumbs, then press them firmly along the edges of the pie pan.
- Whip Cream to Peaks: For a fluffy, cloud-like topping, whip heavy cream with a touch of sugar using an electric hand mixer until it forms soft peaks. This whipped cream will hold up beautifully on the top of the pie.
- Set and Slice: Freeze the pie for at least one hour before serving. Let it sit at room temperature for about 10 minutes before slicing to ensure clean, easy cuts.
- Store Properly: Cover with plastic wrap or an airtight container and freeze any leftovers to keep it fresh.
- Soften the Ice Cream: If your ice cream is too hard, you can soften it in the microwave on low for about 20 seconds.
Substitutions and Variations
- Whipped Cream Variations: Substitute store-bought Cool Whip for a quick topping option, or add almond extract to the homemade whipped cream for an extra layer of flavor.
- Crust Options: Swap the Oreo cookie crumbs for a Graham cracker crust, a nilla wafer crust, or even a chocolate cookie crust for a different twist. Use a premade cookie pie crust to save some time.
- Ice Cream Alternatives: Use pistachio butter ice cream, or try a mix with actual pistachios or ground pistachios for added texture.

This looks delightful! Scarlet loves when we make our own whipped cream as well, so I think we wouldn’t use the canned kind either. And the color is divine!
