Heat oven to 350 degrees. Line your baking sheet(s) with parchment and set aside.
In the bowl of a stand mixer, combine the sugar, brown sugar and softened butter. Cream until smooth, about 2-3 minutes.
Add in the egg, vanilla and green food coloring - just a drop! You can always add more but we want a pale green color here. Mix until combined.
Add in the salt, baking soda, pudding mix and flour. Mix until smooth. If your mixer is struggling, switch to the paddle attachment - the dough is thick.
Add in the white chocolate chips and chopped pistachio pieces. Mix until incorporated.
Scoop out a tablespoon of dough and roll into a ball. Place on the baking sheet about 2 inches apart.
Bake in the preheated oven for 10-12 minutes or until the edges are just slightly browned.
Allow to cool completely.
