Ingredients For Hot Jalapeño Corn Dip
- corn - You can use fresh corn or frozen corn kernals.
- cream cheese - use the block variety, soften at room temperature.
- sour cream -
- Jalapeños - you can use fresh jalapeño or canned.
- Sharp Cheddar Cheese
- Pepper Jack Cheese
- chili Sauce or salsa
- red onion
- garlic
- cumin
- chili powder
- red pepper flakes
- fresh cilantro
- green onions, sliced thin.

How to Make This Hot Corn Dip Recipe
Step By Step Instructions
1. Brown beef over medium heat. Break beef into small pieces using a wooden spoon. Drain.2. Add the beans and tomatoes. 3. Add the rest of the ingredients and cook over medium-high heat until soup starts to boil.4. Reduce to simmer and cover. Let the flavors steep together 15-20 minutes.
- Preheat oven to 350 degrees f.
- Grease a small casserole dish with butter.
- In a large bowl, combine cream cheese, sour cream, salsa or hot sauce, garlic, corn, chopped jalapeños, cumin, chili powder and chili flakes and mix until combined.
- Fold in shredded pepper jack cheese and Cheddar cheese.
- Pour dip mixture in prepared pan.
- Add remaining ½ cup of Cheddar cheese to top of the dish.
- Top with green onions and bake in hot oven for 20-25 minutes.
- Top with cilantro and serve with chips.
I like to grease the baking dish with a little butter to make clean up easier.
Then just pop in the oven.

- You can make this ahead of time and keep it in the refrigerator.
- When serving, you can keep the dip warm in a slow cooker.
- You can make this with out a mixer using two knives or forks to blend the cream cheese. It really works as long as the cream cheese is at room temperature.

- You can substitute canned corn for the fresh or frozen corn, but be sure to drain it first.
- You can substitute canned green chiles for the jalapeños, for a milder kick.
