Main Ingredients For Valentines Fudge

  • candy melts (pink and red)
  • festive sprinkles

Equipment and Kitchen Tools Needed

  • square pan
  • parchment paper
  • knife or bench scraper
  • cutting board

How to Make Pink Layer Fudge

Step By Step Instructions

  1. Place the red candy melts in a microwave-safe bowl and heat on high, in the microwave, for 2-3 minutes or until smooth when stirred. Stop every 15-30 seconds to stir during the melting process to ensure the candy melts don’t overcook.
  2. Follow step one for the pink candy melts, keeping the two colors separated.
  3. Remove the lid and film from the frosting and place it in the microwave for 45 seconds to 1 minute, or until fully melted and smooth. Set aside ½ a teaspoon of uncooked frosting if using the heart sprinkles.
  4. Add the extract to the frosting and stir well.
  5. Place half of the frosting in with the red candy melts and the other half with the pink candy melts.
Stir each color vigorously until fully mixed.
  6. Line your pan with parchment paper, making sure to leave some overhang. Alternate pouring in the two colors of fudge mixture in random spots, pausing to tap the pan in between so it evens out and removes bubbles.
  7. Once all your chocolate mixtures have been poured in and evened out, sprinkle the top of the fudge with as many Valentine’s themed non-pareils as you like. Place in the fridge to chill for 2 hours or until hardened.
  8. Cut fudge before serving!

Pro Tips and Timesaver Shortcuts

  • If your fudge turns out hard or seems to fall apart when you’re cutting it, this means too much chocolate was used. You’ll need to reduce the chocolate the next time around. It will still taste good, it just won’t be very soft or pretty.
  • If your fudge won’t set up well, it means not enough chocolate was used. You either need to increase the chocolate used or decrease the amount of frosting the next time around.
  • The chocolate will slightly seize when the frosting is added to it. This is normal, no need to worry. You just need the mixture to be pourable. Just keep stirring and you’ll be good to go.
  • Do not add the extract directly to the chocolate or it will ruin it. The extract seizes the chocolate to a point that it’s not usable. If you can’t find strawberry candy melts, no problem. The extract still adds plenty of flavor. You can just use normal pink candy melts instead.
  • You can cut the fudge into smaller pieces if you like.

Variations, Notes, and Substitutions

  • If you don’t have access to candy melts, you can use white chocolate chips and color the chocolate with a few drops of red food coloring, but be sure it is oil based food dye. Do not use water based dye or it ruins the chocolate like the extract does.
  • You add colorful conversation hearts to the top the fudge for a fun variation.
  • If you can’t find strawberry extract, you can substitute vanilla extract.
  • You can use a can of strawberry frosting in place of the white frosting.

A Special Reason For This Recipe

I’m so excited to participate in this Valentine’s event (again) with many of my food blogger friends. This is the sixth year for our event and we want to continue to make a difference in the fight against pediatric cancer.

Cancer is the #1 cause of death of children by disease in the U.S. There are 40,000 U.S. children actively battling cancer right now. The National Cancer Institute’s budget for childhood cancer is less than 4%. It’s such a small number and that’s why I got involved.

And with the ongoing pandemic, children are still being diagnosed with cancer. It’s imperative that we raise awareness and continue to raise funds to fund the ongoing pediatric cancer research!

Help us make a difference by donating to Cookies for Kids’ Cancer!

Our goal is to raise at least $3000. Because these three companies: OXO, Mediavine amd Dixie Crystals have each pledged to match our donations raised through this campaign up to $3000! That means when we raise $1, it turns into $4!

Thank you to so many of you who have already donated, please help us reach our goal so we can get the full matching donations and help us make an even huge difference!
