This easy Cheesy Jalapeno Corn Dip is perfect for an appetizer or snack any day! Made easily in minutes, it is delicious with corn chips or crackers. 

This cold corn dip is made with just a few simple ingredients and it is also inexpensive to make. It can also be made as a hot corn dip as is or as a spicy hot jalapeno corn dip. It is so perfect for tv snacking or game night.

This corn dip is SO GOOD and one of my favorite dips – we eat it year round.

Ingredients for Cheesy Corn Dip

  • Corn– of course, this is the star of this recipe. This dip can be made with fresh, canned or frozen corn
  • Arugula – probably my favorite green of all time. With that peppery undertone, it goes well with all the other ingredients, the sweet dried fruits, the nuts, the honey and mustard in the vinaigrette. It is the perfect complement. Baby arugula is more tender usually.
  • Cheese – I prefer to use Cheddar, but you can change it up with Monterey Jack or a mixture of the two. 
  • Sour Cream 
  • Mayonaisse
  • Spices

Substitutions, Variations and Notes

  • You can sub green onions for red onion.
  • This cheesy dip can be served at room temperature or itcan be served as a hot jalapeno corn dip if you wish. Just place in a microwave safe container and heat on medium power for 1-2 minutes, then stir. Continue heating in 1-minute intervals, stirring between each, until the dip is heated through.
  • You can also throw ingredients in a cast iron skillet and bake covered at 350° for 15 – 20 minutes.
  • You can use more or less jalapenos depending on your taste. This recipe as is as mildly hot.
  • You can use Monterrey jack cheese, or pepper jack cheese in place of Cheddar
  • For for best results store leftovers in an airtight container in the fridge.

Ingredients
  

  • 2 cans corn drained
  • 1/4 red onion chopped
  • 1/2 can green chilies
  • 1 jalapeno seeds and skin removed and chopped
  • 1/2 cup sour cream
  • 1/2 cup Mayonaisse
  • 1/2 bell pepper
  • 1 clove garlic minced
  • 1 pinch chili powder
  • 1 cup cheese shredded
  • 1 small bunch of cilantro leaves chopped

Instructions
 

  • Mix all ingredients together in a bowl.
  • Stir well.
