Simple Meatball Soup

This time of year I am always cold and the only thing better than a warm blanket and a warm dog on your lap is a bowl of hot soup. Ok, maybe not better but, AS good as that. So the other night I made some of my meatball soup.
The meatballs are really easy to make and are good on their own or with pasta. But this time I made them into a tomato based soup. This is really good with cheese bread or a grilled cheese sandwich.
By the way did you know that It is National Meatball day? I am not kidding and to be honest, this is why I picked this date to share this with you. Kind of reminds me of the “I lost my poor meatball” song that we used to sing at camp. Do you remember that song? He he….just thinking about it makes me smile.
Anyways, here is the recipe.
Simple Meatballs
1 lb. lean ground beef
1 egg
1/2 cup panko bread crumbs
1 teaspoon minced onions
1/2 teaspoon salt
1/2 teaspoon italian seasoning
1/4 teaspoon black pepper
Preheat oven to 350 degrees. Combine egg, all ingredients together. It is easier to do with your hands. Form into 1 ” meatballs and place on a cookie sheet . Bake a for 25-30 minutes. Watch the meatballs, these should have been taken out a minute earlier.
They are good by themselves, but I love them in this soup.

Meatball Soup (tomato based)
2 14 1/2 oz cans broth
1 28 oz can tomato sauce
1 small can diced tomatoes
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon pepper
parmasen cheese for garnish
Heat tomato sauce, broth and tomatoes in a large pot. Add spices, but not cheese) to a boil. Reduce heat and add meatballs. Cook until heated through and add cheese as a garnish when serving.
