Pico de Gallo with Avocado

When Roma tomatoes come into season, it's the best time to make homemade pico de Gallo with avocado.

This delicious blend of fresh ingredients tastes like summer on a plate. Eat it plain on tortilla chips like salsa, or serve it up on any number of amazing dishes to add flavor and heat.

Why You'll Love This Recipe

Fresh. Nothing tastes as bright and fresh as a bowl of homemade pico de Gallo with avocado.

Versatile. You can put pico on so many different things! From tacos to taco pasta, and everything in between. Quesadillas, fajitas, salads, topping a warm bowl of tortilla soup, nachos, rice bowls -- they all benefit from added fresh pico.

Colorful and Flavorful. Nothing looks as bright and colorful as a bowl of pico and the flavor is beautiful, especially if you have homegrown or farmer's market tomatoes. It is also a very easy recipe!

How to Make Pico de Gallo with Avocado

The only thing you have to do for this fresh salsa recipe recipe is chop all the veggies up (or juice it in the case of the lime). I don't know about you, but sometimes I find all the chopping of vegetables therapeutic.

Once everything is chopped, you mix it all together and give it some time to meld the flavors. The result is a delicious, perfectly blended salsa fresca pico. This chunky salsa is great with chips and as a side dish to meats, fish and any of your favorite Mexican dishes.

Ingredients for Pico de Gallo with Avocado

Just a few simple ingredients are needed for this recipe. Refer to the recipe card for the measurements.

Roma Tomatoes. Seeded and diced fresh tomatoes. If you can't find Romas, other types of tomato fro the grocery store will work - cherry tomatoes too.

Sweet Red Onion. Chopped finely. Adds just the right amount of an oniony bite. You can use white onion in a pinch ,

Jalapeno. Jalapeno pepper should be seeded and chopped finely. If you don't want any heat at all you can leave this ingredient out and the pico will still turn out fine.

Avocado. Diced ripe avocado. I love how perfectly this fat balances out the dish.

Lime. For fresh lime juice.

Fresh Cilantro. Chopped. Adds so much brightness and freshness to the mix.

Salt. To taste.

Sugar. Just a pinch. This is optional.

Pro Tips and Shortcuts for the Pico de Gallo with Avocado Recipe

Use a handheld wooden juicer. This handy little tool makes it so much easier to get all the juice out of a lime or a lemon or an orange.

Freshly-squeezed lime juice helps keep the avocado from browning. It also adds much-needed flavor. It is not interchangeable with lemon for this recipe.

Refrigerating the pico de Gallo for at least a little bit will help the flavors meld and mix so that you get the best possible tasting dish.

FAQ

What does pico de Gallo mean?

Translated, it means "Rooster's Beak." It's unclear what this has to do with the traditional mix of tomatoes, onions, lime juice, and garlic.

Is pico de Gallo with avocado spicy?

It depends. If you want it spicy, include the jalapeno. If you want it spiceless, leave out the jalapeno.

What is in pico de Gallo?

It typically contains Roma tomatoes, red onion, cilantro, garlic, lime juice, jalapeno, and salt.

How long does pico de Gallo last?

You can keep it in the refrigerator for two or three days, but it is best used on the first day.

How do I store the leftovers?

Use an airtight container and keep your leftovers refrigerated for two or three days.

Can you freeze pico de Gallo?

No. I do not recommend freezing this dish. The freshness is what makes it so wonderful.

Is pico de Gallo healthy?

Yes. Everything in this dish is a vegetable or fruit except for a minuscule amount of salt and an optional pinch of sugar. It is full of vitamins and minerals.
