I cannot tell you when I first started to love zucchini. I have been eating it for a while and my favorite way to eat it is sauteed in some olive oil with a few spices. So simple and yet so delicious and filling too!
During this time of year, I love to experiment and create different zucchini recipes for dinner because they make for a great light, summer dinner. I have yet to make zoodles with them, but that is next on my list.
They are also very inexpensive and you can make a cheap dinner out of some zucchini, a few other vegetables, and fresh pasta. I used to grow them in my garden when the kids were little and we would be amazed at how big they would grow.
