Ingredients
Just a few simple ingredients are needed for this recipe. Refer to the recipe card for the measurements.
- Fresh Tomatoes – you can use Roma tomatoes, one he vine, or grape tomatoes or cherry tomatoes
- Fresh Zucchini – cut into bite size pieces
- Red Onions
- Fresh Basil – You could also use oregano or Italian seasoning.
- Extra virgin olive oil
- salt and black pepper
this easy side dish comes together in a skillet on hour stove top in just minutes.
Substitutions and Variations
- Feel free to sub or add yellow squash if that is what you have. You can also sub white or yellow onion for red.
- Add a clove of garlic for extra flavor.
- Add a few more vegetables – mushrooms and bell peppers work nicely.
- Use a salt substitute if you are trying to lower your sodium intake. The flavors of the vegetables shine in this dieh.
How to Make Zucchini Tomato Sauté
- Chop zucchini and onions after washing. Cut up tomatoes and set them aside.
- In a skillet over medium heat, add olive oil. Add zucchini
- Add tomatoes.

Sauteed Zucchini and Tomatoes
Equipment
- large skillet or large sauté pan
Ingredients
- 2-3 zucchini squash sliced
- 2 tablespoons olive oil
- 1/4 cup red onion diced
- 2 medium tomatoes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon fresh basil
Instructions
- Heat olive oil over medium high heat.
- Slice zucchini and chop tomatoes and onion.
- Add zucchini to the heated pan for about 2-4 minutes or until squash becomes tender.
- Add chopped onion and stir.
- Add tomato and stir the vegetables. Cook an additional 2 minutes until tomatoes are warmed through.
- Sprinkle with salt, pepper and basil.
