This simple and easy Mango Arugula Salad Recipe is made with fresh mango, arugula, cranberries, nuts, and Parmesan Cheese. A delicious salad for any time of year.
It is just what I need to balance out my casseroles. If you are looking to lighten things up a bit for lunch or dinner, like I am, this is a great Arugula salad recipe to change things up.
This recipe makes a great meal on its own or you can serve it with a bowl of Roasted Vegetable Soup. Mangoes are available now in some parts of the world and will be more prevalent in the next few months.
I am trying to incorporate more fruits and vegetables in our diet and this is a tasty way to do that. This Mango Arugula salad also travels well if you pack the ingredients separately. Perfect for a picnic lunch at the park or on the beach!
The fresh ingredients in this simple salad make it a great way to celebrate the season too! Top it with a tasty vinaigrette dressing and you have the makings of a great side dish or meal.
For another dinner option, add some cooked skinless, boneless chicken pieces to make a wonderful Mango Arugula Chicken Salad. It is one of my go to lunches when I want something that is light but has some protein too.
Wonderfully satisfying and low in fat, it is a great choice for a meal. Warmer weather and summer dresses are coming soon and I think we all want to feel better and look better in the months ahead.
Mango Arugula Salad Ingredients
The following ingredients were used in this original recipe.
Arugula - this leafy green is a nice alternative to spinach. It is a bit lighter and has a little pepper flavor.
Mango - You will want a couple of ripe mangoes for this recipe
Cranberries - This is a great way to use up some of those leftover dried cranberries from the holidays.
Almonds - Sliced almonds are best. I prefer salted for this recipe.
Parmesan Cheese - One of my favorite cheeses that makes everything taste better!
This mango salad recipe is good on its own but it makes a truly lovely side dish as well. The mango just brightens up the salad!
Vinaigrette Salad Dressing Recipe
½ cup of vegetable oil
⅓ cup balsamic vinegar
1 teaspoon Dijon mustard
2 tablespoons sugar
½ teaspoon pepper
Whisk vinaigrette ingredients in a small bowl, or mason jar until well blended and set aside.
Really simple and really fast already but see how to put it together even quicker.
Mango Arugula Salad Recipe
- Use bagged baby Arugula mix to save time.
- You can even purchase the peeled and chopped mango, or you can peel and precut the mango ahead of time and use it for several dishes and smoothies.
- Use pre-shredded Parmesan cheese.
This also makes a nice brunch salad. I love that the arugula is different than the usual lettuce and the sweet mango and cranberries offset it nicely! You will want to pin this one for later.

Mango Arugula Salad Recipe
Ingredients
- 6 cups baby arugula
- 1 cup fresh mango peeled and chopped into bite-sized pieces
- 1 tablespoons chopped almonds
- 1 tablespoon dried cranberries
- ¼ Parmesan cheese shredded
Instructions
- Mix all salad ingredients in bowl.
- Mix Vinaigrette ingredients in small bowl.
- Combine Vinaigrette and salad and gently toss.

Fantastic salad. Didn’t have balsamic vinegar on hand used red wine vinegar and a bit of maple syrup (I’m Canadian lol) for the dressing, definitely a hit with the family.
