INGREDIENTS FOR SIMPLE CHICKPEA SALAD
Cherry tomatoes - The perfect size tomatoes for this recipe but you can always use bigger tomatoes and cut them down.
Bell pepper - Chop them up and add in different colors.
Chopped red onion - I like to use red onion or sweet onion for this recipe.
Cucumber - I don't peel my cucumber because I like the crunch it gives.
Chopped parsley
Clove garlic, minced
Cider vinegar
Salt
HOW TO MAKE THIS SIMPLE CHICKPEA SALAD RECIPE
- In a large bowl, combine the chickpeas, tomatoes, pepper, onion, cucumber, parsley, and garlic.
- In a cup, mix together olive oil, vinegar, lemon juice, and salt.
- Pour over salad and toss to coat well.
- Let stand for at least 15 minutes to allow the flavors to blend.
NOTES & TIPS
- The longer that you give this salad to mesh together with the flavors after making it, the better the flavors will be! I like to make it up at least 15 minutes in advance but I've found that when I make it and keep it covered in the fridge for a few hours, the flavors are amazing.

Ingredients
- 1 can (15 oz) Chick Peas, rinsed and drained
- 1 cup cherry tomatoes, halved
- ½ bell pepper, chopped
- ¼ cup chopped red onion
- 1 cucumber, chopped
- 1 tablespoon chopped parsley
- 1 clove garlic, minced
- ½ cup olive oil
- ¼ cup cider vinegar
- 2 tablespoons lemon juice
- ½ teaspoon salt
