- Cucumber - I don't peel my cucumber because I like the crunch it gives.

- lemon juice - Just a splash adds a nice citrus flavor
- Clove garlic, minced
How To Make A Simple Vegan Chickpea Salad
- In a large bowl, combine the chickpeas, tomatoes, pepper, onion, cucumber, parsley, and garlic.
