I love this simple salad recipe because there's no cooking involved. It's a fast and easy dish that can be a great side option or a mean meal, all in itself. It's perfect for a light weekend meal at home or great to share with family and friends at an outdoor picnic or BBQ.

This also makes a great lunch meal if you are meal planning. It keeps well in the refrigerator.

Easy Chickpea Salad Recipe

INGREDIENTS FOR SIMPLE CHICKPEA SALAD

Chickpea Salad Ingredients
  • Chick Peas - Use canned chickpeas to save time.
  • Cherry tomatoes - The perfect size tomatoes for this recipe but you can always use bigger tomatoes and cut them down. 
  • Bell pepper - Chop them up and add in different colors.
  • Chopped red onion - I like to use red onion or sweet onion for this recipe.
  • Cucumber - I don't peel my cucumber because I like the crunch it gives.
  • Chopped parsley
  • Cider vinegar
  • lemon juice - Just a splash adds a nice citrus flavor
  • Clove garlic, minced

How To Make A Simple Vegan Chickpea Salad

  1. In a large bowl, combine the chickpeas, tomatoes, pepper, onion, cucumber, parsley, and garlic.
  2. In a cup, mix together olive oil, vinegar, lemon juice, and salt.
  3. Pour over salad and toss to coat well.
  4. Let stand for at least 15 minutes to allow the flavors to blend.

Time-saving Tips

  • Chopping - Chop all of the ingredients the day before and mix it together when you are ready.
  • Mix and marinate: Once you have added all the ingredients, mix them well and let the salad sit in the fridge for at least an hour. This will allow the flavors to blend together and create a more flavorful salad.
  • Make it nutty - Add something crunchy like toasted nuts or seeds
  • Add veggies - Add vegetables such as bell peppers, onions, tomatoes, cucumbers, and carrots for crunch

  • 1 can (15 oz) Chick Peas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • ½ bell pepper, chopped
  • ¼ cup chopped red onion
  • 1 cucumber, chopped
  • 1 tablespoon chopped parsley
  • 1 clove garlic, minced
  • ½ cup olive oil
  • ¼ cup cider vinegar
  • 2 tablespoons lemon juice
  • ½ teaspoon salt

  • In a large bowl, combine the chickpeas, tomatoes, pepper, onion, cucumber, parsley, and garlic.
