This Simple Chickpea Salad recipe is a light and refreshing meal. It’s not only loaded down with flavor but it has such a nice crisp with each and every bite! This is the perfect salad recipe for spring and summer, especially when you can add in fresh vegetables from your garden or from the local farmers’ market. 

When you’re hungry but wanting something a bit lighter on the tummy, this chickpea salad recipe is the answer every single time. It just might become a summer staple side dish or meal for your house, just like it is in ours!

I love this simple salad recipe because there’s no cooking involved. It’s a fast and easy dish that can be a great side option or a mean meal, all in itself. It’s perfect for a light weekend meal at home or great to share with family and friends at an outdoor picnic or BBQ. 

This chicken pea salad recipe is just so refreshing and will make you craving even more. And there’s nothing bad about pumping your body full of delicious veggies, right?

Chickpea Salad Ingredients

Chick Peas – Use canned chickpeas to save time. 
Cherry tomatoes – The perfect size tomatoes for this recipe but you can always use bigger tomatoes and cut them down
Bell pepper – Chop them up and add in different colors. 
Chopped red onion – I like to use red onion or sweet onion for this recipe. 
Cucumber – I don’t peel my cucumber because I like the crunch it gives. 
Chopped parsley
Clove garlic, minced
Olive oil
Cider vinegar
Lemon juice – Just a splash adds a nice citrus flavor. 


  1. In a large bowl, combine the chickpeas, tomatoes, pepper, onion, cucumber, parsley, and garlic. 
  2. In a cup, mix together olive oil, vinegar, lemon juice, and salt.
  3. Pour over salad and toss to coat well.

  • The longer that you give this salad to mesh together with the flavors after making it, the better the flavors will be! I like to make it up at least 15 minutes in advance but I’ve found that when I make it and keep it covered in the fridge for a few hours, the flavors are amazing.

Everyone might have their own version of chickpea salad, but my version is using canned chickpeas with fresh vegetables. A true simple salad recipe means that there is no cooking and it’s a light and refreshing taste. The main flavor and ingredient are chickpeas but the other additions complement the flavor well. 

How long does Chickpea Salad last?

Once you make this simple chickpea salad, you’re going to want to eat it within 2-3 days of making it. This recipe is best served fresh and I don’t recommend trying to freeze it at all.

  • 1 can (15 oz) Chick Peas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 bell pepper, chopped
  • 1/4 cup chopped red onion
  • 1 cucumber, chopped
  • 1 tablespoon chopped parsley
  • 1 clove garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup cider vinegar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
