Easy Meatloaf

This easy meatloaf recipe is perfect for dinner any night of the week. We tend to enjoy this in the cooler seasons and serve it with mashed potatoes. It's really delicious and flavorful!

Meatloaf is a great dish for Sunday supper too! Once you mix the ingredients, it just cooks for about an hour and is ready to serve.

Hello Friends! I hope that the new year is treating you well and that you are making progress on all your resolutions or goals if you make any.

I have been enjoying the slightly longer days and looking for ways to refresh my decor. It is a little early for spring, but I am already getting some ideas on things I would love to add to my home.

Of course, we are still enjoying a warm fire in the evenings and I have caught up on some reading too! Today's recipe is one for those cooler evenings because it is comfort food at its best. There is nothing like a savory meatloaf and mashed potatoes to bring back memories of growing up.

Ground Beef - I use a lean ground beef of 15/85%.

Bread Crumbs – I like to use old bread or rolls that I have on hand. You can use pre-packaged bread crums or crackers if you don't have bread.

Mustard – I use powdered mustard but if you only have yellow on hand, it will work too.

Onion – I love to use sweet white onions for this recipe.

You can make the meatloaf in a loaf pan or shape it into a loaf on a cookie sheet. I have used both methods and prefer the loaf pan. You can also make mini-loaves with this pan for a fun change.

Ingredients
  

  • 2 lbs ground beef
  • ½ cup onions, chopped
  • 1 ½ cups breadcrumbs
  • ⅓ cup milk
  • 2 eggs
  • ¼ cup ketchup
  • 2 tablespoons Worchestershire sauce
  • 1 teaspoon dry mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat oven to 350•
  • Grease a loaf pan with butter or oil or non-stick spray.
  • Mix all ingredients in a bowl with a fork or with clean hands.
  • Bake in oven 45-55 minutes or until temperature reaches 155-160 degrees.
  • Let cool a few minutes prior to serving.

You can use pre-packaged bread crumbs to save some time

Chop the onion the evening before or substitute onion flakes (1 ½ tablespoons), for the fresh onion.

You can freeze the meatloaf baked or unbaked and store it in the freezer for future use. It will need to be defrosted before baking.

How long do you cook meatloaf? For about an hour or so. The important thing is to let the meat reach an internal temperature of 155- 160 degrees.

Can meatloaf be cooked in a crockpot? Yes, just be sure to line the pot with foil. For slow cooking, you will want to cook it three hours on low heat or three hours on high heat.

    The seasonings look so good! I haven't had meatloaf in ages. One thing I liked as a kid was meatloaf with cheese surprise inside! I only had that once, come to think of it.
    Either way, it's delicious.
