Substitutions and Variations
You can substitute ground turkey for ground beef.
Substitute other small pasta for the penne.
You can double the recipe and make it in a big pot instead of a skillet.
You can make this ahead of time and put it in a casserole dish for the next night's dinner.
Top each serving with a small dollop of sour cream. Serve with a side of garlic bread or dinner salad.
Store leftovers in an airtight container.

Taco Pasta with Ground Beef
- 1 lb ground beef
- ½ packet taco seasoning
- 2 cups penne pasta
- 2 cups water
- 1 cup jarred or fresh salsa
- 2 tablespoons chopped green chilis
- ½ can of corn about ⅔ cup
- 1 clove garlic
- ½ teaspoon chili powder
- 2 tablespoons cilantro chopped
- 1 cup cheddar cheese shredded
- 1 small tomato chopped
- ¼ teaspoon garlic powder
- In a large skillet, over medium-high heat, brown ground beef.
- Drain oil and add taco seasoning and coat ground beef.
- Add pasta, water, salsa, green chilis, corn, garlic, garlic powder and chili powder.
- Heat to a boil.
- Cover and simmer about 12-15 minutes, stirring occasionally.
- remove from heat, add cheese and tomatoes
- Add cilantro and serve.
