This is one of those perfect dinners when you want to whip something together in a single skillet. Made with ground beef and pasta, it is filling and so tasty!
I love to make this with and serve it in bowls for an easy dinner. This also reheats well and is good for leftovers the next day.
Good morning!! How was your weekend? Are you and the family ready for Halloween? I am not sure how many trick or treaters we will get at our new home, but I bought plenty of candy to be prepared. With my luck, there will be a lot leftover and I will be eating it.
This weekend, we watched football, baseball and I even got a bit of crafting done. The holidays are right around the corner and I am trying to get caught up. If you are having a busy day, this Southwestern One Pot Pasta is a great dish for your dinner rotation. It all cooks in one pot making preparation and clean up easy - and we love easy!
Delicious and easy to make all in a single skillet. Most of the ingredients are likely those you already have on hand. In about 30 minutes, you will have a piping hot meal.
One Pot Taco Pasta with Ground Beef
This is easier than a taco pasta bake but if you like casseroles, you can put it in the oven for a few minutes.

Taco Pasta with Ground Beef
Ingredients
- 1 lb ground beef
- ½ packet taco seasoning
- 2 cups penne pasta
- 2 cups water
- 1 cup jarred or fresh salsa
- 2 tablespoons chopped green chilis
- ½ can of corn about ⅔ cup
- 1 clove garlic
- ½ teaspoon chili powder
- 2 tablespoons cilantro chopped
- 1 cup cheddar cheese shredded
- 1 small tomato chopped
Instructions
- Over medium heat, brown ground beef.
- Drain oil and add taco seasoning and coat ground beef.
- Add pasta, water, salsa, green chilis, corn, garlic, and chili powder.
- Heat to a boil.
- Cover and simmer about 12-15 minutes, stirring occasionally.
- remove from heat, add cheese and tomatoes
- Add cilantro and serve.
