This Crockpot Marry Me Chicken recipe is the perfect slow cooker meal for a weeknight dinner or Sunday suppers.

This slow cooker chicken recipe is a family favorite at our house, moist chicken and basil in a creamy sundried tomato sauce make for a wonderful dish. I use a milk and heavy cream combination to lighten up the creamy sauce a bit.

This is one of our easy chicken dinner recipes you will want to bookmark for later.

Tasty. Tender chicken in a cream sauce with basil and roasted red peppers make for a delicious complete meal.

Easy Recipe. This is the perfect recipe to put together ahead of time. Just a coupe of minutes of prep time and simple ingredients make this a hearty slow cooker meal. This works for busy weeknights, or a special occasion.

Versatile. This delicious dish can be modified by changing up the vegetables or adding a little spice to it.

Crock Pot Marry Me Chicken Ingredients

  • skinless chicken breasts
  • olive oil
  • fresh basil
  • sundried tomatoes
  • chicken broth

Substitutions and Variations

There are several delicious ways to change up this creamy chicken dish,

  • Green Beans - instead of ice
  • Vegetables - use potatoes, carrots, onions or even roasted peppers add nice flavor and texture to this recipe.
  • Chicken Tenders or chicken thighs -you can easily substitute chicken tenders or thighs, which are less expensive cuts of meat for the chicken breasts,

How to Make Crockpot Marry Me Chicken

Step 1 - Dredge the chicken pieces in flour, salt and ....Brown the chicken in a skillet over medium heat before adding it to the crock pot. Sauté until golden brown.

Step 2 - Add chicken, broth, cream, tomatoes and cream cheese. Add seasonings.

Step 3 - Cover and cook on high for 2-2.5 hours.

Step 4- Add Parmesan cheese and fresh basil leaves.

Serve with the sauce. This recipe can be cooked with rice in the crockpot so the rice is an optional ingredient. The photo below shows the chicken with chicken rice on the side.

Storage

This delicious chicken dish tastes best the day it is made, but if you happen to have leftovers, store in the refrigerator in an airtight container.

  • Use crock pot liners in your slow cooker to save on clean up time. These work great to keep the crockpot relatively clean.
  • Don't skip browning the chicken before adding to the crock pot. This will help to seal in the juices and make the chicken more flavorful.
  • Prepare the vegetables ahead of time and store in the refrigerator until ready to prepare.
  • Store leftovers in the refrigerator in an airtight container. You can also freeze this recipe,  store in a freezer-safe container for up to 2-3 months. You could store longer but I find that dishes lose a bit if flavor after a couple of months.

Boneless, skinless chicken breasts typically take 3-4 hours to cook on low or 6-8 hours on low. Boneless, skinless chicken thighs typically take 4-6 hours to cook on low or 8-10 hours on low.

How do I know when the chicken is done cooking?

Chicken is done cooking when it reaches an internal temperature of 165 degrees F.

Ingredients
  

  • 3-4 chicken breasts sliced
  • ½ cup all purpose flour
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 cup chicken broth or chicken stock
  • ½ cup heavy cream
  • 2 cloves garlic
  • 2 teaspoons onion powder
  • 2 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 4 oz cream cheese cubed
  • ⅓ cup drained sun dried tomatoes chopped
  • 2 tablepsoons fresh basil chopped
  • ½ cup shredded parmesan cheese
  • ½ teaspoon red pepper flakes optional
  • 1 ½ cup instant rice optional

Instructions
 

  • Mix flour, salt, paprika and black pepper in a small bowl. Dredge chicken pieces in flour mixture.
  • In a large skillet, add olive oil and butter over low heat. Add chicken pieces and brown about 2 -3 minutes each side and set aside.
  • In a large crock pot, add chicken, broth, cream, cream cheese, sun dried tomatoes and seasonings.
  • Cook on high for 2 hours- 2.5 hours (this will depend on how thick your chicken is..Stir to mix sauce.
  • At this point, there is an option to shred the chicken.
  • Add parmesan cheese. If adding rice, this is the time to add it. see option below. Cook an additional 15-20 minutes.

Rice Option

  • Stir in rice and parmesan cheese and cook for an additional 15-20 mins until chicken is done and rice is tender.

Notes
