- Onion, diced – Use whatever type of onion you’d like here.
- Chicken breasts – boneless skinless chicken breasts. You can also use other cuts of chicken and leftover chicken too.
- Kosher salt
- Pepper
- Garlic powder – Don’t confuse with garlic salt.
- Italian seasoning
- Cream of chicken soup – You can use low sodium soup here as well.
- Chicken broth – Low sodium chicken stock is a great option, too.
- Instant (canned) biscuit dough – I use grands biscuits
- Frozen peas and carrots – If you have other frozen veggies, you can add them in, too.

How to make this comforting meal
- Add onion, chicken breasts, salt, pepper, garlic powder, Italian seasonings, chicken broth, and cream of chicken soup to the crockpot.
- Cook chicken mixture on HIGH for 4 hours. Once cooked, remove the lid carefully.
- Using a fork, shred chicken by moving your fork around in a circular motion.
- Add frozen peas and carrots and stir. Chop biscuits up and layer across the top of the chicken. Cook on HIGH for another 2 hours. Serve warm and enjoy!

- Thicken the broth: If you’d like a thicker broth, add a cornstarch slurry (mix a tablespoon of cornstarch with a cup of water) to the crockpot during the last 30 minutes of cooking.
- Use refrigerated biscuit dough: Pillsbury Grands biscuits work wonderfully, but other store-bought biscuit dough also delivers fluffy dumplings.
- Crockpots vary: All crockpots/slower cookers do not heat the same. Cooking time may vary depending on the size of the pot. If at the 4-hour mark you need to add more liquid, do so, to avoid burning later.

Ingredients
- 1/2 onion, diced
- 2-3 boneless chicken breasts
- 1 teaspoon salt

- 2 14 0z cans chicken broth
- 1 can instant Grands biscuits
- 1 16 oz bag of frozen peas and carrots
