Ingredients for Chocolate Caramel Cookies

Flour. White all-purpose flour.
Baking Soda. To make the cookies rise.
Cocoa. Did I mention these cookies are double chocolate? Chocolate batter, chocolate chips, chocolate frosting. Mmmm.
Butter. You can use a butter substitute.
White Sugar. Granulated sugar.
Egg. Just one.
Vanilla. Pure vanilla is preferred. Imitation vanilla will work.
Chocolate Chips. Semi-sweet is traditional, but you could also use white chocolate chips, milk chocolate chips or dark chocolate chips.
Ingredients for the Topping
Chocolate Frosting. Store-bought frosting is perfectly fine.
Caramel candy. These come in little squares wrapped in plastic. These will make the caramel sauce.
Cream. Heavy cream works perfectly.
Caramel Bits. Heath bits, skor bits or toffee bits are another version of the same thing.

How to Make Chocolate Caramel Cookies
Step 1 - Mixing the cookie dough couldn't be easier. Preheat your oven.
Cream butter and sugar in a mixing bowl.
Then add eggs and vanilla. In the meantime, mixtures the dry ingredients in a separate bowl. Getting your kids to help with this is priceless!
Combine the dry ingredients with the wet ingredients to form a soft dough.

Step 2 - Scoop portions of dough onto prepared baking sheet about two inches apart. Bake cookies for 12 minutes.

Step 3 - Cool completely.

Step 4 - While cookies are baking prepare caramels for melting.

Step 5- Unwrap each of the caramels and combine them with the heavy cream in a microwave safe bowl. Heat for fifteen seconds at a time, stirring between each time until the caramels are melted. Stir to fully combine

Step 6 - Frost each cookie with chocolate frosting.

Step 7 - Drizzle the caramel over the cookies

Step 8 - Sprinkle cookies with Skor bits or Heath bits before the caramel sets. Serve.



Timesaving Tips for Best Results
Bake cookies on parchment paper for easy cookie removal and easy clean up.
Do not over bake your cookies. Remove them based on time and not based on how they look. Let them sit on the tray for one or two minutes and then move them to a cooling rack.
Let the Caramel chocolate cookies cool completely before trying to frost them or the frosting will melt and slide off.
If you want perfectly sized cookies use a cookie scoop to measure the dough. Otherwise, I just use a dinner spoon to scoop and plop the dough onto the cookie sheet.

Yes. Use a one-for-one gluten-free all-purpose flour. You can find it in the specialty section of your grocery store or Walmart. Common brands include Pillsbury and King Arthur.
I want to make these salted-caramel chocolate cookies?
Sprinkle a little bit of coarse Kosher salt or coarse pink sea salt over the top before the caramel sets. Don't use too much.

Chocolate Caramel Cookies

Ingredients
Cookies
- 1 cup flour
- ½ teaspoon baking soda
- ¼ cup cocoa
- ⅓ cup butter
- ½ cup white sugar
- 1 egg
- 1 teaspoon vanilla
- ½ cup chocolate chips
Frosting
- 1 cup chocolate frosting
- 12 soft caramels
- 1 tablespoon cream
- 1 tablespoon Skor bits or Heath bits
Instructions
- Cream together butter and sugar in a medium bowl.
- Add egg and vanilla and mix well.
- In a medium bowl add flour, cocoa and baking soda.
- Combine flour mixture to wet ingredients until a soft dough forms.
- Fold in chocolate chips.
- Drop 8-10 large scoops of dough onto a parchment paper lined baking sheet.
- Bake at 350 for 12 minutes.
- Ice each cookie with the frosting.
- Unwrap the caramels, combine with cream in a microwave safe bowl.
- Heat at 15 second intervals, stirring until the caramel is melted.
- Drizzle caramel over cookies and sprinkle with Skor bits.
