Do you ever feel like you want to surprise your family with something special, but you do not want to make a trip to the market to put it together? With Valentine’s Day coming quickly, I wanted to bake some special cupcakes for the family, but I did not want to make a trip to the store. I found a jar of cherries in the cupboard and decided to make some Cherry Cupcakes.
I used a white cake mix and grabbed the jar of cherries and went to town. Super easy and quick, my kind of recipe for a busy day.
Quick Cherry Cupcakes
Mix cake mix according to package directions and add one small jar of drained and chopped maraschino cherries. (When draining the cherries, save the cherry juice for the frosting.)
Bake in cupcake tin according to package directions. Let cool before frosting. Here is a peak at the cherries inside the cupcake.
For the frosting, I used the following recipe:
Buttercream Frosting
1/4 cup butter, softened
2 – 3 tablespoons cherry juice
3 cups powdered sugar
Cream butter with an electric mixer on low speed. Add sugar slowly . Add cherry juice and a couple of drops of red food coloring. Whip on medium speed until frosting peaks. Frost when cupcakes have cooled.

Your cherry cupcakes look so delicious, and love that they were so easy for you to make. The tip you used for the icing on your cupcakes made all the difference as well, because they look so uniform and absolutely decadent!
I made strawberry chocolate chip cookies for Valentine’s Day and they are so soft, so pink, and just so fun for the holiday. As for plans, I want to wake up a little earlier than my fiance and make him some strawberry crepes (really feeling the strawberry lately!), and then later on we plan to go out to dinner and a movie. Excited for the time out!
