Patriotic Pinwheel Cookies

These Patriotic Pinwheel Cookies are so festive and fun! There is nothing like a Red, White and Blue cookie to bring smiles to the barbecue! Independence day is coming quickly and today I wanted to share this fun recipe idea for some cookies I made a few years ago.

Hi Friends!

When I was little, all the families on our street used to bring out their lawn chairs and the packages of fireworks that we purchased from firework stands.

My favorite were the black snakes that used to make a mess and stain the concrete!

Now, every year we head over to a swimming and barbecue party that some friends of our host. This year I am thinking about taking some fun pinwheel cookies that I made by adapting my old chocolate pinwheel recipe.

These cookies take a few steps because you have to color the dough, but it really is easy once you have the dough ready to slice and bake.

 

Basically, once you make the dough, you will need to split the dough into three and add food coloring to two of them.

When rolling each of the doughs into a rectangle, I suggest keeping it on wax paper for ease of transferring.

Layer each color on top of one another.

Starting at one end, roll up the three layers.

Roll dough

Wrap spiral in wax paper and chill in the refrigerator at least one hour, or two. You must not skip the chilling step because you need the dough to chill and adhere together.

When ready to bake, preheat oven to 375 degrees.

Line cookie sheets with parchment paper.

Slice the rolled dough in 1/4 inch slices.

Bake 9-11 minutes until lightly golden.

Cool before removing from sheet.

Patriotic Pinwheel Cookies Recipe

4 cups flour

1 teaspoon salt

1 teaspoon baking powder

2 1/2 sticks butter softened (1 1/4 cups)

1 cup brown sugar

2/3 cup sugar

2 eggs

1 teaspoon vanilla extract

blue and red food coloring (I used Americolor)

 

Cream butter, sugars, eggs, and vanilla until combined.

Slowly add flour, salt, and baking powder.

Do not be afraid to use your hands to really get the dough blended.

Split dough into thirds.

Set one aside and separate the remaining two into separate bowls.

Add red food coloring to one of the dough mixtures and use an electric mixer to adequately tint the dough.

Repeat with the other third and blue food coloring.

Roll out each color into a rectangle on wax paper as shown above.

Layer the three colors of dough and refrigerate at least two hours.

When ready, slice cookies and place on parchment paper on cookie sheet.

Bake at 375 • for 9-11 minutes.

Let cool completely before moving.
