Today I am sharing an Apple Cupcake Recipe with you for the season. These easy Apple Cider Cupcakes are made with apple cider and topped with a lovely brown sugar buttercream frosting.
These dessert cupcakes have a nice apple flavor and make a nice fall dessert and I am very excited to share this new cupcake recipe.

This recipe only requires a few ingredients.

Cake Mix
Apple Cider - Be sure to use fresh apple cider. It doesn't work as well with apple juice.
Eggs
Oil
Apple Pie Spice - You can use storebought or make homemade apple pie spice
Chopped Walnuts

- 24 cupcake liners or muffin cups
- Small cookie scooper (optional)
- Handheld electric mixer or stand mixer
- measuring spoons
- medium bowl and large bowl
- piping bag and piping tip (optional)
How to Make Apple Cupcakes with Cider
Instructions
- Preheat the oven to 350°F In a large mixing bowl, beat cake mix apple cider, eggs, oil and apple pie spice on low speed with an electric mixer until blended.
- Add chopped nuts.
- Fold into batter gently.
- Line 2 cupcake trays with 24 cups. Scoop the batter into the baking cups (about ⅔ full).
- Bake for 18 to 20 minutes or until a toothpick comes out clean.
- Allow cupcakes to cool in the pan for 10 minutes before removing.
Remove from pan and allow cupcakes to cool completely for another 15 to 20 minutes.

Top with buttercream frosting (recipe below) and a few chopped walnuts.

- Trade out walnuts for pecans. You can also substitute raisins if you do not want nuts.
- Top with a cream cheese frosting for a fun change.
- Add a teaspoon of vanilla extract for extra flavor.

- 3 eggs
- ½ cup vegetable oil
- ½ teaspoon apple pie spice
- 2 cup chopped walnuts

- Vanilla cream cheese buttercream
Instructions
- Preheat the oven to 350°F
- Line 2 cupcake trays with 24 cups

- Beat at medium speed for two minutes
- Straight down the sides of the bowl and fold in chopped walnuts.
- Evenly distribute between 24 cups
- Bake for 18 to 20 minutes or until a toothpick comes out clean.
- Allow cupcakes to call in the pan for 10 minutes before removing.
- Remove from pan and allow cupcakes to cool completely for another 15 to 20 minutes.
- Frost cupcakes after completely cooled using a piping bag and tip if desired. You can also use a spatula to frost. Top each with a few chopped walnuts

Apple Cider Buttercream Frosting
½ cup unsalted butter, softened
4 ounces softened cream cheese
2 cups powdered sugar
¼ cup brown sugar
3 tablespoons apple cider
1 teaspoon vanilla
½ teaspoon ground cinnamon
Directions:
- Cream the butter and cream cheese and brown sugar together in a large bowl with an electric hand mixer until light and fluffy.
- Add powdered sugar gradually.
- Add the cinnamon, apple cider, and vanilla and mix to combine.
- If icing is too runny, add a little more powdered sugar.
- Frost cooled cupcakes.
