  • fresh strawberries
  • fresh blueberries
  • fresh blackberries
  • fresh raspberries
  • mini spongecakes or angel food cake.

Be sure to only use fresh berries for this recipe.

How to Make Macerated Berries

In a medium bowl, simply toss fresh, sliced berries with a bit of sugar (about 1–2 tablespoons per cup of fruit) and let them sit at room temperature for 30 minutes to an hour. Stir before adding to the shortcakes.

Timesaving Tips

  • You can coat the berries with a little lemon juice to help keep the fruit fresh.
  • Macerate strawberries or blueberries earlier in the day or the night before. They’ll be juicier and ready to go.
  • Whip the cream in advance – Whip and chill your cream a few hours ahead (or use quality canned whipped cream in a pinch).

Ingredients
  

Blueberry strawberry shortcake

  • 8 sponge cake dessert shells
  • 3 oz strawberries diced
  • 3 oz raspberries
  • 3 oz blueberries
  • 3 oz blackberries

Frosting

  • 1/4 cup sugar
  • 1 package cream cheese room temperature (8 ounces)
  • 1/4 cup milk at room temperature
  • 1/4 teaspoon vanilla extract

Instructions
 

  • For the frosting: add sugar, cream cheese, milk, and vanilla to a large bowl. Use a hand mixer on medium speed to mix until smooth and creamy, scraping the sides as needed. Continue mixing until frosting reaches a fluffy and creamy consistency.
  • Frost each shortcake by spooning the frosting and then cover with the berries.
  • The leftover berries can be placed on the plate next to each shortcake.

Notes

The vanilla dessert shells can be found in the bakery section or near the strawberries.
Can use heavy cream in place of the milk, if you would like fluffier frosting.

    I have everything I need for these strawberry shortcakes. My blueberries are getting ripe and strawberries are in the refrigerator. YUM!
