This classic Struesel Coffee Cake (Bisquick) recipe, also known as Bisquick Coffee Cake or Bisquick crumb cake, has been loved for decades. Made with Bisquick mix, sugar, and milk, it comes together quickly and bakes into a moist cake topped with a buttery cinnamon streusel topping. It’s perfect with a cup of morning coffee or as a cozy afternoon snack.
I first made this in middle school when the recipe was printed on the back of the box of Bisquick. Now I bring it out for easy entertaining or when I need a nostalgic treat.

Why This Bisquick Cinnamon Coffee Cake
This cinnamon streusel coffee cake starts with a box of Bisquick and simple ingredients. It bakes into a moist cake with a sweet streusel topping and tender crumb – perfect with your morning coffee or as a quick afternoon snack.
It’s a delicious recipe that comes together fast in a large bowl and bakes beautifully in a prepared pan. Easily store leftover coffee cake in an airtight container for enjoying later.

This semi-homemade breakfast cake is perfect for enjoying on a Saturday morning. Everyone in your house is going to love this moist Bisquick coffee cake!

List of main ingredients.
Bisquick Mix – I highly recommend Bisquick baking mix for this recipe, but jiffy or generic brand baking mix will work just fine.
Brown Sugar –I prefer light brown sugar, but dark brown works fine too.
White Sugar
Cinnamon Topping – This topping makes it so good! You can find the recipe for the topping below.

Variations for This Cinnamon Streusel Coffee Cake:
Make an apple coffee cake by adding sliced apples or apple pie filling to the bottom of the cake pan or mixed into the tender cake mixture.
Add chopped pecans or walnuts to the cake batter or streusel topping.
Drizzle the top of the cake with a simple glaze made from powdered sugar and water.

Use a pastry blender in a small bowl to mix cold butter into the streusel ingredients until coarse crumbs form.
Bake in a prepared pan until golden brown, then cool and cover with plastic wrap.

How to make Streusel Coffee Cake

The full recipe is below, but it is basically four steps:
- Heat oven.
- In a large bowl, mix coffee cake ingredients (bisquick with egg, milk and sugar).
- In a separate bowl, make the streusel topping.
- Pour the cake batter into a prepared baking dish.
- Add the streusel mixture to the top of the coffee cake batter.
- Place in preheated oven and bake until golden brown and serve.
Store in an airtight container.

- I like to have baggies with the baking mix and sugar ready to go in the pantry. I use a container for the dry ingredients for the batter and for the topping – so easy!

Streusel Coffee Cake
Equipment
- medium bowl
- wooden spoon
- square pans
Ingredients
- 2 cups Bisquick
- 1 egg room temperature
- 2/3 cup milk
- 2 tablespoons sugar
Streusel Topping
- 1/3 cup Baking mix
- 1/3 cup Brown sugar (packed
- 1/2 teaspoon Ground cinnamon
- 1 tablespoons butter or margarine cold firm
Instructions
- Grease an 8" or 9" cake pan or square pan.
- Preheat oven to 375°
- Mix cake ingredients in a medium mixing bowl
- Pour into greased baking dish.
- Spread evenly in pan with an offset spatula or butter knife.
- Prepare the streusel ingredients – Stir streusel ingredients in a small bowl with a fork until crumbly. This topping recipe works well on other breads and muffins too!
- Sprinkle topping (recipe below) on top of the batter.
- Bake 20-24 minutes until a toothpick comes out clean.

I love the word “streusel.” I love the thing streusel too! Cassidy was up baking around 6am today and the house smelled wonderful. It was cookies, but oh, for it to have been coffee cake too!

I couldn’t believe how easy this coffee cake was to make. I had one whipped up in no time and topping was A-1. I’ve always loved streusel toppings. They aren’t too sweet, just enough to satisfy the sweet tooth. This recipe is a keeper.
