Spring is here! I am loving all of the fresh fruit that is making its way to the grocery store. Recently, I have been on a strawberry kick. This Easy Strawberry muffins recipe is super easy and I love the juicy strawberries in the muffins.

This recipe is so easy, it only has five ingredients so you know I love it, but this time of year, I am all about adding more strawberry recipes to the menu!

Strawberries grow most of the year here in California, but the harvest season starts next month. I love the bright red juicy berries and they are perfect in these muffins.

These are the best strawberry muffins when you want to make them in just a few minutes. You can even make these in the morning and have them ready for breakfast or lunch boxes. My favorite is with a cold glass of milk or a cup of hot tea depending on the temperature.

These are perfect for breakfast, brunch, picnics and just as a fun dessert. Strawberries are in abundance this time of year and it makes this recipe inexpensive to make.

How to Make Strawberry Muffins

  1. Wash strawberries and remove stems
  2. Cut strawberries into pieces and set aside
  3. Mix dry ingredients and milk into a medium mixing bowl.
  4. Gently fold in strawberries.
  5. Bake as directed.

Ingredients
  

  • 2 cups baking mix
  • ⅔ cup sugar
  • ⅔ cup milk 2% ok
  • ¾ cup fresh strawberries washed
  • 1 egg

Instructions
 

  • Preheat oven to 400 degrees.
  • Prepare muffin tin with paper baking cups or grease a muffin tin.
  • Remove stems from strawberries and cut into into small bite sized pieces (4-6 pieces per strawberry). Set aside.
  • In a bowl, mix together baking mix, sugar, egg and milk, batter will be a bit lumpy.
  • Gently fold in strawberries.
  • Pour batter in baking cups.
  • Bake for 14-16 minutes until golden brown.
  • Let cool 4-5 minutes.

timesaving tips to streamline recipes

Fresh strawberries are best for this recipe, I do not recommend using frozen. However, you can prepare strawberries ahead of time by washing, destemming and chopping.

You can use a mini muffin tin and reduce the baking time by about ⅓. Be sure to grease the pan first and test the muffin for doneness with a toothpick.

    What could be better than that? I think you know that we get major strawberries here and I always need recipes for them.
