Easy Green Beans Salad
1 pound green beans
½ onion chopped
3 tomatoes (I used Roma)
¼ cup Parmesan Cheese
Fill a saucepan with water
Heat water until boiling
Cook beans in boiling water 5-6 minutes
Remove from heat and drain
In a bowl mix dressing ingredients (below).
Pour over hot beans and stir well.
Chill 1-2 hours min
Top with Parmesan cheese
Green Bean Salad Dressing
⅓ cup olive oil
2 tablespoons Red wine vinegar
1 clove garlic, crushed
1/2 teaspoon salt
1/2 teaspoon mustard
Pinch of black pepper
Mix ingredients in small bowl or mason jar. Blend thoroughly and pour over green beans.
Prepare the green beans ahead of time by washing beans and breaking off the ends.
Use garlic form a jar or tube in place of fresh garlic.
You can use a bottled balsamic vinaigrette dressing instead of making your own.
Prepare extra salad and eat it again for lunch the next day.
