Rice Krispies cereal mixed with chewy marshmallow is the nostalgic snack we all love, dipped in nothing less than Ghiradelli's dark chocolate to make the simple a little more sophisticated.

Ingredients for Chocolate Dipped Rice Krispie Treats
Rice Krispie Cereal. It does not have to be brand name rice cereal. It can be a grocery store brand.
Jet Puffed Mini Marshmallows. Large marshmallows can also be used as a substitution. It should take 40 large marshmallows. Try to make sure you find fresh marshmallows, not marshmallows that are stuck together in the bag.
Butter. A non-dairy butter or margarine works fine.
Ghirardelli's Dark Chocolate Melting Wafers. These are high quality chocolate that will set your treats apart.
Marshmallow Bits. These are dried, tiny marshmallows and so fun to work with! I love to use these mini marshmallows.
Paper Straws. These work perfectly as the sticks.

How to Make Chocolate Dipped Rice Krispie Treats
Melt butter on low then add in five and a half cups miniature marshmallows. Stir often until fully melted.

Stir in rice Krispies into the melted marshmallows until well incorporated.

Line a baking sheet with parchment paper and pour out rice krispies mixture onto the parchment paper. Press down with a spatula. Let dry 30 minutes.

After 30 minutes cut the krispies into squares. Melt Ghirardelli's chocolate as directed on the bag in a microwave safe bowl.

Place the straw into the rice krispy treats. Dip the krispy treat into the melted chocolate. Pull out and place on parchment paper so that excess chocolate can drip. Immediately add marshmallow bits to the outside before the chocolate dries.

Tips for Best Results
Do not let the treats dry for too long, because eventually they will get too hard for you to get the straws inserted.
To melt chocolate in the microwave, place it in a glass bowl. Microwave for thirty seconds and stir. Microwave another thirty seconds and stir again. After this use fifteen second increments, stirring after each. Chocolate holds its shape after melting, so you won't be able to tell. If you don't stir it, you may well burn it.
You can also make this recipe in the microwave! Use a very large glass bowl, the largest that will fit in your microwave. Melt the butter and marshmallows. Add the cereal and stir. Proceed as described above.
Store in an air-tight container - use wax paper to separate the treats in a single layer.
Popsicle sticks will also work.
Overcooking your marshmallows will make the treats hard and crunchy once they cool. As soon as the last one melts, the mixture is ready for cereal. Do not use high heat.

Substitutions and Variations For Chocolate Dipped Rice Krispies Treats
- Use chocolate Rice Krispies cereal for a different take. Instead of using dark chocolate, you can use a different kind of chocolate - white chocolate, milk chocolate, or semi-sweet chocolate. You can even use candy melts or melted chocolate bars.
- Instead of marshmallow bits, you can use chocolate nibs, small candies, crushed candy bars, or sprinkles. Customize your chocolate dipped Rice Krispie treats according to holiday or occasion.
- If you don't want to use paper straws, you can use craft sticks (tongue depressors) or candy sticks.
- Lucky charms, Cocoa Pebbles, Corn Flakes, Chex, or Fruity Pebbles can also all work for this recipe. If you walk down the cereal aisle you can pick any cereal, brand name or generic, that is small and light and would stick together with marshmallows.
- Store krispy treats in an airtight container.
