Nuts – I always make this recipe with pecans, but you could use walnuts if you want.  

Sugar – You can use light or dark brown sugar.

If you want to omit the marshmallows, you can replace them with a sprinkling of brown sugar.

  1. Cut potatoes
  2. Heat potatoes on the stove until fork tender. Transfer to a large bowl.
  3. Grab a potato masher once potatoes are cooked.
  4. Mash away at the sweet potato mixture.

Ingredients
  

  • 3-4 pounds sweet potatoes peeled and cut into cubes
  • ½ cup 1 stick unsalted butter, softened
  • ¾ cup brown sugar packed
  • ½ cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • ¼ cup pecans chopped

Casserole Topping

  • 2 cups mini marshmallows
  • ¼ cup pecans chopped

Instructions
 

  • Peel and cut sweet potatoes into cubes
  • Place cut potatoes in a large pot and cover with water
  • Bring to boil on the stovetop and cook for 10-15 or until tender
  • Drain and add to a large bowl
  • preheat oven to 375° F
  • Lightly spray a 13×9 baking dish with cooking spray
  • Mash with a potato masher.
  • Add butter, brown sugar, milk, eggs, vanilla, and salt and whisk until well combined
  • Stir in pecans
  • Evenly spread mixture into prepared baking dish
  • Sprinkle with marshmallows and remaining pecans
  • Bake uncovered for 25-30 minutes or until marshmallows are golden brown
  • Serve immediately

  1. I seriously started liking sweet potatoes THIS YEAR. My kids aren’t into them yet but when they see the marshmallows, they will change their minds!
