Hello Friends! I am loving that spring has sprung! This week, we enjoyed a couple of meals al fresco and even made it down to the beach. I love visiting the beach this time of year because the summer crowds have not yet arrived, so it is a little quieter and calmer.
I could just spend hours watching the waves and the sailboats go by. I look forward to many more picnics at the beach in the coming weeks.
Speaking of the outdoors, this easy cake-like homestyle cornbread recipe is perfect for outdoor barbecues and picnics at the beach. It is also perfect side dish for homemade chili and as a lunch box treat. It packs well and is just slightly sweet and goes perfectly with a little scoop of creamy honey butter.

If you are wanting to know how to make cornmeal in a cast iron skillet, this recipe works well as written as long as you use a heavy cast iron skillet that is 9" or 10" in diameter, like this one.

Easy Cornbread Recipe from Cornmeal
Ingredients
- 1 cup flour
- 1 cup yellow cornmeal
- ⅔ cup sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 5 tablespoons butter
- 1 egg
- 1 cup milk
Instructions
- Preheat oven to 400.
- Grease a round or square 8' or 9' baking pan.
- In a bowl combine flour, cornmeal, sugar, baking powder, and salt.
- Melt butter and pour into cornmeal mixture.
- Beat the egg and add to bowl.
- Add milk and blend well.
- Pour into greased pan.
- Bake 15-20 minutes or until a toothpick inserted in center comes out clean.
