These simple pumpkin pancakes can be made in minutes!! A nice way to celebrate the fall season!
So now that it’s officially fall, I am ready for some fall breakfast. Part of the fun of enjoying each season is cooking and baking with the flavors available.
Today I made some really simple Wheat Pumpkin Pancakes. I use a pancake mix and canned pumpkin to save some time. You would never know the difference in the taste as they taste like they were made from scratch.
I chose a wheat mix as a base, but you can use a regular base as well.
Simple Pumpkin Pancakes:
1 1/2 cups pancake mix
3/4 cup plus 3 Tablespoons milk
1/3 cup canned pumpkin
1/4 teaspoon Pumpkin Pie Spice
Preheat a skillet or flat grilling pan on medium heat. In a bowl, mix ingredients together until almost lump-free.
Mix ingredients until batter is pourable. Pour onto hot skillet. I like to make mine mini-size.
Cook over medium heat until light-medium browned and turn.
Continue on griddle until light-medium brown on both sides. Serve promptly.
Serve with syrup and/or whipped cream and sprinkle with a little cinnamon! It is a fun way to celebrate fall at breakfast time.
