Pumpkin Pecan Cookies
Ingredients
- 1 cup butter softened
- ¾ cup sugar
- ¼ cup brown sugar packed
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ½ ground nutmeg
- ½ teaspoon allspice
- 1 egg
- 1 teaspoon vanilla
- 1 cup canned pumpkin
- 2 cups flour
- ¾ cup chopped pecans
Instructions
- Preheat over to 350 degrees.
- Line baking sheet with parchment paper
- In a bowl, mix together butter, sugars, and egg over medium speed with a mixer.
- Add dry ingredients and spices to butter mixture until blended.
- Add pumpkin and pecans and blend.
- Drop by cookie dough by heaping teaspoons onto lined baking sheet and bake 12-14 minutes until lightly browned.
- Transfer cookies to a wire rack and let cool.

My favorite ice cream is sold in a little shop in Hammonton NJ. It’s pumpkin pecan but only sold around the end of Sept. Hopefully this is as good, I’ll make in the near future and comment further, thanks for the memory.

Just a question about the coloring I know it says anatto and turmeric for coloring but it also says orange with no explanation.is there any artificial colorings also added as I am extremely allergic to yellow and red dyes

The coloring comes from the canned pumpkin so you would want to ensure you use one without any artificial dyes.
