Today’s recipe is an easy one when you are looking for a simple fall dessert idea to put together quickly. Celebrating the season with great fall food is a nice way to slow down and enjoy the simple moments of life.
I love easy recipes like this one because I can use ingredients I already have on hand and the amount of clean up is minimal. This muffin also has a nice sweet, crumbly topping.
One of the nice things about pumpkin muffins is that they are a great sweet snack that you can easily share with others. I love sending a few muffins to my neighbors and friends.
I love to use canned pumpkin for this recipe because it is so simple to use. The flavors of the pumpkin pie spice just bring about wonderful memories of previous fall seasons.

Tips for This Recipe
I used canned pumpkin for this recipe, but you can use cooked pumpkin puree for this as well.

Easy Pumpkin Muffins
Ingredients
- 1 cup sugar
- 1 cup canned pumpkin
- ½ cup butter
- ½ cup water
- 2 eggs
- 1 ½ cups flour
- ¼ teaspoon salt
- 1 ½ teaspoons baking soda
- ½ teaspoon nutmeg
- ½ teaspoon cinnamon
Instructions
- Preheat oven to 350 °.
- In a large bowl, blend sugar, pumpkin, water, melted butter and eggs.
- In a second bowl, mix flour, salt, baking soda, cinnamon and nutmeg until blended.
- Add dry ingredients to pumpkin mixture and blend well.
- Pour into muffin cups.
- Spoon one tablespoon of topping (recipe below).
- Bake 28-30 minutes until a toothpick comes out clean.
Nutrition
Crumb Muffin Topping
Mix the following ingredients into a small bowl for topping:
¼ cup sugar
3 tablespoons flour
¼ teaspoon cinnamon
3 tablespoon cold butter (cut up)
You can use this recipe for mini muffins too! You can decrease baking time to 12-14 minutes.t Just make sure that you bake until a toothpick inserted in the muffin comes out clean.
Pre-measure the dry ingredients the night before and store in a covered bowl. I like to do this with muffin and bread recipes for easy preparation in the morning. Any sealed container will help with this, but I especially like these.
