These easy apple muffins use applesauce for incredible moisture and come together in just 25 minutes using a baking mix. Perfect for breakfast, snacks, or lunchboxes – it is fall baking made simple!I

This post is one of my delicious muffin recipes and was originally published in 2012 but has been updated with helpful tips and new photos.

If you’ve got a box of Bisquick and a jar of applesauce, you’re 25 minutes away from the most tender, cinnamon-spiced apple muffins. No peeling, no chopping — just simple pantry ingredients and one bowl. These have been a reader favorite since 2012 for good reason.

Simple Apple Muffins

Hello Friends! I hope you are enjoying all that fall brings. We are getting cool breezes and I am pulling out all my pairs of jeans and getting the boots ready. It is still a bit warm for boots, but a girl can hope, right?

Today I made apple muffins because I love apples, especially in the fall.  I think it is from all of those memories of going to the apple farms this time of year to pick apples. This recipe uses a baking mix (I used Bisquick, applesauce, apples and just a few pantry ingredients).

Simple Jiffy Apple Muffins

Recipe Highlights

  • One bowl, no mixer needed. Uses a baking mix to save time.
  • Kid-friendly and lunchbox-perfect.
  • Easily customizable with add-ins like raisins, walnuts, or a cinnamon-sugar topping.
  • Budget Friendly – super simple ingredients
  • Like my Bisquick Blueberry muffins and my Bisquick Chocolate chip Muffins, and Strawberry muffins, these are fast and delicious – family tested and approved.

Bisquick Apple Muffin Ingredients

Apple muffins baking mix ingredients
  • Baking mix (Bisquick or Jiffy) — the shortcut that makes this recipe so fast. No need to measure out flour, baking powder, and salt separately.
  • Applesauce — the secret to moist, tender muffins without any peeling or chopping. Use unsweetened so you control the sweetness.
  • Brown sugar + granulated sugar — the combination gives these muffins a subtle caramel depth that plain white sugar alone can’t match.
  • Milk, egg and oil — just enough fat and liquid to bring it all together into a light, fluffy batter.
  • Cinnamon — just one teaspoon, but it makes the whole kitchen smell like fall.
  • Apples – I like to include apple bits in the muffins.

Variations

  • Add ½ cup chopped walnuts or pecans
  • Stir in ½ cup raisins
  • Top with a simple vanilla glaze for a dessert version

Time Saving Tips to Make these Even Faster

  • Use a pre-measured baking mix. Bisquick and Jiffy both work beautifully here — no need to sift or measure multiple dry ingredients.
  • Don’t skip the oven temperature change. Baking the muffins at a higher temp first helps the muffin tops stay a little more puffed.
  • One bowl is all you need. Mix the wet ingredients first, add the dry, stir until just combined — done. Fewer dishes, faster cleanup.
  • Use a danish whisk – no need to pull out a mixer. I love mine for so many recipes.
  • Use a cookie scoop. A standard cookie scoop portions the batter into muffin cups quickly and evenly, with no drips or mess.
  • Line your pan ahead of time. Set out your muffin liners before you start mixing so you’re ready to fill and go straight into the oven.
  • Make a double batch and use your freezer. These muffins freeze beautifully for up to 3 months. Cool completely, wrap individually, and pull one out the night before for a ready-made breakfast.

These muffins are perfect when you want to make a fun fall treat and do not have a lot of time.

Serving Suggestions

For breakfast: Serve warm with a pat of butter and a drizzle of honey alongside a hot cup of coffee or tea. They pair beautifully with a simple fruit salad to round out the morning.

For brunch: Arrange on a tiered tray with other mini baked goods for an easy, impressive spread. A little apple butter on the side takes them completely over the top.

For snacks and lunchboxes: Pack one or two in a small bag or container — they hold up well at room temperature and travel without crumbling. Kids love them as an after-school treat.

Storage Suggestions

Room temperature: Store in an airtight container lined with a paper towel for up to 3 days. The paper towel absorbs excess moisture and keeps them from getting soggy.

Refrigerator: These muffins keep well in the fridge for up to 5 days in a sealed container. Warm them in the microwave for 15–20 seconds before eating — they taste freshly baked again.
