If you’ve got a box of Bisquick and a jar of applesauce, you’re 25 minutes away from the most tender, cinnamon-spiced apple muffins. No peeling, no chopping — just simple pantry ingredients and one bowl. These have been a reader favorite since 2012 for good reason.

Hello Friends! I hope you are enjoying all that fall brings. We are getting cool breezes and I am pulling out all my pairs of jeans and getting the boots ready. It is still a bit warm for boots, but a girl can hope, right?
Today I made apple muffins because I love apples, especially in the fall. I think it is from all of those memories of going to the apple farms this time of year to pick apples. This recipe uses a baking mix (I used Bisquick, applesauce, apples and just a few pantry ingredients).

Bisquick Apple Muffin Ingredients

- Baking mix (Bisquick or Jiffy) — the shortcut that makes this recipe so fast. No need to measure out flour, baking powder, and salt separately.
- Applesauce — the secret to moist, tender muffins without any peeling or chopping. Use unsweetened so you control the sweetness.
- Brown sugar + granulated sugar — the combination gives these muffins a subtle caramel depth that plain white sugar alone can’t match.
- Milk, egg and oil — just enough fat and liquid to bring it all together into a light, fluffy batter.
- Cinnamon — just one teaspoon, but it makes the whole kitchen smell like fall.
- Apples – I like to include apple bits in the muffins.
Variations
- Add ½ cup chopped walnuts or pecans
- Stir in ½ cup raisins
- Top with a simple vanilla glaze for a dessert version

Step 1 – In a mixing bowl, add wet ingredients – egg, sugars, applesauce and butter. Blend until incorporated

Step 2 – Add baking mix and mix.

Step 3 – Add apples and cinnamon to the flour and sugar mixture.

Step 4 – Pour muffin batter into greased muffin tin (or use muffin liners). Bake as directed. Use the toothpick method to check doneness.

Time Saving Tips to Make these Even Faster
- Use a pre-measured baking mix. Bisquick and Jiffy both work beautifully here — no need to sift or measure multiple dry ingredients.
- Don’t skip the oven temperature change. Baking the muffins at a higher temp first helps the muffin tops stay a little more puffed.
- One bowl is all you need. Mix the wet ingredients first, add the dry, stir until just combined — done. Fewer dishes, faster cleanup.
- Use a danish whisk – no need to pull out a mixer. I love mine for so many recipes.
- Use a cookie scoop. A standard cookie scoop portions the batter into muffin cups quickly and evenly, with no drips or mess.
- Line your pan ahead of time. Set out your muffin liners before you start mixing so you’re ready to fill and go straight into the oven.
- Make a double batch and use your freezer. These muffins freeze beautifully for up to 3 months. Cool completely, wrap individually, and pull one out the night before for a ready-made breakfast.
These muffins are perfect when you want to make a fun fall treat and do not have a lot of time.

Ingredients
- 2 cups baking mix such as Bisquick or Jiffy
- 2 tablespoon butter
- 1/3 cup applesauce
- ½ cup brown sugar
- 1/4 cup granulated sugar
- ½ cup milk
- 1 egg
- 1 medium apple peeled and diced
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 425 degrees f.
- In a bowl, mix egg and sugars and butter together to combine.
- Add baking mix, applesauce, cinnamon, apples, and milk until blended.
- Put into a greased muffin tin or muffin tin lined with baking cups.
- Bake at 425 degrees for 5 minutes, then lower the temperature to 350° F and bake another 20 minutes.
- Let cool a few minutes before serving.
