peanut butter - use natural peanut butter
maple syrup
vanilla extract
salt - sea salt works well too.
coconut flour
coconut oil
vegan chocolate chips

- Small cookie scoop
- Microwave Safe bowl
- parchment paper
- Cake Pop Mold - the silicone mold will help you make perfect one inch balls. (these work better than milk chocolate chips)
How to Make Peanut Butter Balls
Instructions
Prepare the Peanut Butter Mixture
- Mix Peanut butter, maple syrup, vanilla, and a pinch of salt in a large bowl.
Stir in the coconut flour with a wooden spoon. - Place peanut butter dough in the refrigerator for 2 hours (if in a hurry, freeze for 30 mins)
Using a small cookie scooper, portion out 12 sections and roll them into balls. - Be sure to round out the balls
- The mold will help you make rounds. Place on a baking sheet in a single layer. Freeze for 20 min or chill for an hour.
Melt the chocolate chips and coconut oil for 45 seconds on High and stir.
Return to microwave and warm chocolate by heating in 30-second increments until chocolate is smooth. - Dip each ball into the melted chocolate and place it on a parchment-lined baking sheet to set. Repeat for remaining balls.
- Use a fork to dip the balls instead of a spoon to drain off excess chocolate.
Chill until chocolate coating sets.
