Hello Friends! I hope you are having a wonderful week! We are gearing up for the summer season and are wrapping up the school year. If you have been following me on Instagram, you can see I have been finding some fun summer items at my favorite stores. We are planning for our long weekend later this month and I am also gearing up for some traveling this summer.
Today I am sharing a fun recipe for red, white and blue muffins that not only is a great recipe for fresh berries, it also makes a wonderful 4th of July or Memorial picnic recipe idea. The red and blueberries are juicy this time of year and make for a colorful patriotic side dish.
Fruit muffins are something I never get tired of baking. You will find lots of muffin recipes on this site and they make a great sweet treat when you just want a little something with your coffee or want to pack a little snack. .

Easy Mixed Berry Muffins

Mixed Berry Muffins
Ingredients
- 1 egg
- 3 tablespoons oil
- ½ cup milk
- ¾ cup sugar
- 1 ¾ cups flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon vanilla extract
- 1 cup strawberries
Instructions
- Preheat oven to 375°.
- while oven preheats, wash and remove stems from strawberries.
- Drain strawberries and chop into small pieces. Sprinkle sugar on pieces and set aside.
- In mixing bowl, combine egg and oil.
- Add salt, baking powder, flour sugar and vanilla.
- Gently fold strawberry pieces into batter.
- Bake in greased muffin tin 30-40 minutes.

You can use a baking mix for these by eliminated the flour, salt, brown sugar, and baking powder
