ground chicken
breadcrumbs
buffalo sauce
butter
celery
onion
egg
oil
salt and black pepper to taste

How to Make Easy Buffalo Chicken Meatballs
Step By Step Instructions
- Preheat the oven to 450°F.
- Line a rimmed baking sheet with parchment paper
- In a small sauce pan, sauté celery and onions in 1 to 2 tablespoons of olive oil.
- Meanwhile in a large mixing bowl, combine Buffalo sauce and butter. Add ground chicken.
- When onions are sautéed, add to ground chicken mixture.
- Add breadcrumbs, salt and pepper, and the egg. Mix with a spoon until well incorporated.
- Shape meatball mixture into 1 inch balls and bake for 20 to 24 minutes.

A cookie scoop helps to make them uniform, but you can use clean hands to form too.

Pro Tips and Timesaver Shortcuts
- You can use homemade buffalo sauce or hot sauce from your grocery store if you prefer.
- You can use clean hands to roll into balls in place of a cookie scoop.
- If you are trying to make the meatballs really spicy your sauce will need to be HOTTER - do not add
more sauce or else your measurements will be off and the meatballs won't bind well.
Variations, Notes, and Substitutions
- You can substitute ground turkey for ground chicken
- You can make these and put them in a roll for a new flavorful meatball sub.
Serving and Storage Suggestions
- Serve with a little extra buffalo sauce, hot sauce, or blue cheese crumbles. These also go great with blue cheese dressing or ranch dressing.
- Add some carrot sticks and celery sticks on the side for a fun snack.
- Store leftovers in an airtight container in the refrigerator. I like to use freezer-safe plastic bags and freeze then I have a meal that is ready to go,

Chicken Buffalo Meatballs
Ingredients
- 1 LB ground chicken
- ¾ cup Italian breadcrumbs
- ¼ cup + 1 tablespoon Buffalo sauce
- ¼ cup butter
- 1 stalk celery minced

- 1 egg lightly beaten
- 1-2 tablespoon olive oil
- ¼ teaspoon salt
