Tips for the Best Results

  • Don’t Overmix: Mix the dough just until the dry ingredients are combined. Overmixing can result in tough biscuits.
  • Chill the Dough: If your kitchen is warm, consider chilling the biscuit dough for a few minutes before rolling it out. This helps the biscuits hold their shape and rise better.
  • Roll Dough Gently: On a lightly floured work surface, roll the dough to a 1-inch thickness. Avoid pressing too hard, which can lead to dense biscuits.
  • Bake on a High Temperature: A preheated oven at 450°F ensures a quick rise and golden brown tops.

Substitutions and Variations

  • Shortening Alternatives: If you prefer, unsalted butter or even a combination of butter and shortening can be used for a richer flavor.
  • Sweet Additions: Add a tablespoon of caster sugar or icing sugar to the flour mixture for a slightly sweeter biscuit. These are great for dessert applications like strawberry shortcake.
  • Buttermilk: Real buttermilk is truly best, but if you don’t have buttermilk on hand, you can substitute a mixture of ½ cup of milk with 2 teaspoons of lemon juice. Let it sit at room temperature for 10 minutes. The lemon juice will curdle the milk a bit.
  • Cast Iron: Feel free to make these the old fashioned way with a cast iron skillet.
