Beef Roast Sliders – Mississippi Pot Roast

These Beef Roast Sliders are pure melt-in-your-mouth comfort food in an easy finger food form. Whether you’re feeding a hungry crowd or looking for a weeknight dinner, these savory sliders are the highlight of any delicious meal.

This is a very easy meal to prepare, and it is one of my favorite slider recipes.

These tender Shredded Beef Sliders are packed with savory, juicy flavor thanks to a slow-cooked chuck roast. The whole recipe comes together with just a few ingredients – one that might surprise you! – and it practically makes itself with very little effort on your part.

It’s all the flavor of a Mississippi pot roast in miniature sandwich form. You can even make the roast a day or two ahead and easily assemble when you’re ready! Serve them with your favorite toppings and sides for an easy party food, game day snack or weeknight dinner.

These simple shredded beef sliders are made with easily found, common ingredients. I’ve included possible substitutions and variations below.

  • Chuck roast – I recommend using a 3 lb roast, or as close as you can get.
  • Ranch dressing mix – Hidden Valley is probably the most popular, but use your favorite packet ranch mix
  • Au jus gravy mix – or brown gravy packet mix.
  • Butter
  • Pepperoncini peppers – in juice and reserve the liquid.
  • Hawaiian rolls – King’s Hawaiian rolls are probably most popular, but there are multiple brands who make slider buns. Check the bread aisle in your local grocery store.
  • Provolone
cheese – The classic choice for roast beef sandwiches, but feel free to switch up types of cheese for your favorite.
  • Garlic salt – or garlic powder if that’s what you have. You can add a pinch of salt or not.
  • Parsley – finely chopped

Equipment Needed To Make 

  • Skillet
  • Crock pot or similar slow cooker
  • Forks to shred (or meat claws if you have them)

Substitutions & Alterations

  • You can sub a brown gravy mix for au jus mix.
  • You can sub all sorts of cheeses for the provolone. Cheddar, Pepper jack, Swiss, Smoked Gouda, even Asiago are all good choices.
  • Sub brioche buns or my Texas Roadhouse Copycat Dinner Rolls for the Hawaiian buns.
  • You can sub brisket or round roast for the chuck

How to Make Roast Beef Sliders (Mississippi Pot Roast) Step 1

Step 1 – Add the chuck roast to the crock pot. Add the ranch packet, au jus, butter, pepperoncini peppers, and pepper juice. Cover and cook on low for 8 hours or high for 4-5 hours, until the beef is very tender and easily shreds with a fork.

Step 2 – Remove cooked beef from the slow cooker, shred with two forks.

Step 3 – Prepare bottom halves of slicers. Add 6 slices of Provolone to each slider and top with pot roast beef.

Step 4 – Place on the top half of the rolls. Melt your butter and stir in the garlic salt and parsley.  Brush the tops of the rolls with the melted butter mixture.

Step 5 – Place in oven and bake for 15 minutes, or until the tops are golden brown and the cheesy melted.

Raquel’s Time Saving Tips & Tricks

  • Prepare the seasonings ahead of time and keep handy in your spice cabinet when you want to make this meal.
  • Make and shred the roast the day ahead and assemble when ready.
  • You can use any flavor of cheese you prefer. Or none at all.
  • Make sure to drain the excess juice off the meat when adding it to the sliders so they do not get soggy. Reserve the juice for dipping.

What to Serve With Chuck Roast Sliders

You can dip the sandwiches in some of the reserved liquid like an au jus or smear some horseradish or Beer Cheese Mustard Sauce on them. Serve them with any of these great sides for a complete dinner.

How to Reheat Sliders

If you have the ingredients separate, you can heat the beef in the microwave for 1-2 minutes to loosen it up and release some of the juices, then follow the recipe card instructions to assemble and bake the sandwiches.

To prepare sandwiches already wrapped in foil: 

Preheat oven to 350. Place the foil-wrapped sandwiches directly in the oven and heat for 15-20 minutes. Carefully remove the foil and check to see the sandwiches are heated to your liking. If they need a few more minutes, you can keep the foil open or pull it down to expose the sliders more, and heat for another 5-10 minutes.

Equipment

Ingredients
  

  • 1 3 pound chuck roast
  • 1 oz packet ranch dressing mix
  • 1 oz packet au jus gravy mix
  • 1/4 cup butter
  • ½ cup sliced pepperoncini peppers
  • ¼ cup pepperoncini juice
  • 12 Hawaiian rolls
  • 12 slices provolone
¼ cup sliced pepperoncini peppers for topping
  • 2 tablespoons butter
1 teaspoon garlic salt
  • 1 teaspoon parsley finely chopped

Instructions
 

  • Place the chuck roast in your slow cooker. Add the ranch packet, au jus packet, ¼ cup butter, ½ cup sliced pepperoncini peppers, and pepperoncini pepper juice.
  • Cook on high for 6 hours or low for 8 hours.
  • Shred the meat and remove any visible fat.
  • Preheat your oven to 350 degrees.
  • Grease a 9×13 baking dish.
  • Slice your rolls in half and place the bottom layer of the rolls in the baking dish.
  • Layer 6 slices of provolone.
  • Next pile on all that shredded meat.
  • Top with the remaining cheese and ¼ cup sliced pepperoncinis.
  • Place on the top half of the rolls.
  • Melt your 2 tablespoons of butter and stir in the garlic salt and parsley.
  • Brush the tops of the rolls with the melted butter mixture.
  • Place the sandwiches in the oven and bake for 15 minutes or until the tops are golden brown and the cheese melted.
  • Serve!

Notes

Store leftovers in an airtight container in the refrigerator.
