Today’s recipe is an easy one when you are looking for an easy dinner idea to put together quickly. I love simple recipes like this one, because I can use ingredients I already have on hand and the amount of clean up is minimal. I also love the way all the flavors come together in a warm soup in just minutes too. This recipe is meatless too!

But we have a few ways to save time with this recipe.
You can use frozen broccoli, but honestly, it just takes a few minutes to steam broccoli on the stovetop.
Double the recipe for larger servings. It will keep in the refrigerator about 3-4 days.
Note: You can also make this broccoli cheese soup with half and half in replacement of the milk for a creamier, richer soup.
Broccoli Cheese Soup Recipe
Broccoli Cheese Soup
- 2 tablespoons butter
- 1/2 cup chopped onion
- 1/2 clove garlic, minced
- 1/4 cup flour
- 1 1/4 cup milk (regular or 2%)
- 2/3 cup broccoli, cooked and chopped
- 3/4 cup shredded Cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 pinch nutmeg
In a medium saucepan, melt butter over medium-high heat.
Add onions and garlic and cook 3 to 4 minutes, stirring occasionally, until tender.
Add flour to pan,
Gradually add milk into flour mixture while stirring until mixture is smooth.
Add broth, milk, salt, pepper and nutmeg and heat thoroughly.
Add cheese to soup and cook, stirring occasionally, until cheese melts, about 5 minutes.
You can also make this Broccoli Cheese Soup in a crockpot and simmer on low for 2-3 hours.
