Broccoli Cheese Soup

This fast Homemade creamy broccoli cheese soup is delicious and comforting. Tender broccoli florets simmer in a rich broth with vegetables, then blended with a creamy cheese sauce. This Broccoli Cheddar soup is hearty comfort food at its best and is great for a cold day or evening and is ready in about 20 minutes.

Ingredients

  • 4 tablespoons butter
  • 1/4 cup chopped onion
  • 2 stalks celery chopped
  • 1 clove garlic, minced
  • 1/4 cup flour
  • 1 1/2 cups milk (regular or 2%)
  • 1 cup chicken broth
  • 2 cups broccoli, cooked and chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pinch nutmeg optional
  • 1 1/4 cups shredded Cheddar cheese divided

Instructions

  • In a medium saucepan, melt butter over medium-high heat.
  • Add onions, celery and garlic and cook 3 to 4 minutes, stirring occasionally, until tender.
  • Add flour to pan and cook another 2 minutes.
  • Add broth, milk, salt, pepper and nutmeg and heat thoroughly.
  •  Bring to a boil and stir until thickened. Reduce soup to low heat, stirring occasionally, about 10-15 minutes  
  • Add cheese and mix 1 cup of cheese until cheese is melted.
  • Serve into bowls and top each bowl with a little more shredded cheese if desired.

Notes

Store leftoverrs in an airtight container in the refrigerator.
