Easy Blueberry Muffins

These easy Blueberry Muffins are the perfect breakfast bread any day of the week. Made with fresh blueberries and lemon for a wonderful treat.

Muffins are always a treat as a breakfast or mid-morning snack. We have also enjoyed them as a light dessert too! A wonderful way to enjoy the flavors of the season.  If you have extra blueberries, you can make this homemade blueberry crisp too!

 Hello Friends! How is your week going? We are enjoying the warmer weather and are spending more time outside. I have been working on my little succulent and herb gardens this week. It is so fun to take care of these and know that they will be here in the coming months. 

Today’s recipe is an easy one when you are looking for a quick blueberry muffin that doesn’t take a lot of time to make. I love simple recipes like this one because I can use ingredients I already have on hand and the amount of clean up is minimal.

Today’s recipe is a wonderful blueberry muffin recipe that is great for any time of year!

List of main ingredients.

Blueberries – I use fresh strawberries for this recipe, but you can use frozen if you like. Be sure to clean and drain the blueberries so that they are ready for baking. 

Milk  – I use two-percent milk for this recipe and they always come out great. You can also use whole milk or cream if you wish.

Sugar – I find that white sugar is best for this recipe, but you can use brown sugar if you prefer. Because brown sugar contains molasses, it changes the flavor a little bit.  

Variations on this recipe

You can add nuts to this recipe if you wish.

These Easy Blueberry muffins are light cake-like muffins with juicy blueberries. Made from scratch with fresh blueberries and simple ingredients, these bakery style muffins are great as a quick bread. Perfect as a breakfast muffin or lunch box snack, this easy blueberry muffin recipe is a keeper.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon    salt         
  • 1 cup milk
  • 1 egg
  • 1/4 cup butter, melted
  • 1 cup blueberries, washed and drained
  • 1 zest of one lemon

Instructions
 

  • Preaheat oven to 375°
  • Prepare a muffin tin with baking cups or by greasing.
  • In a medium bowl, mix together all ingredients except for blueberries.
  • Once batter is blended, fold in blueberries gently.
  • Pour into prepared muffin tin.
  • Bake for 20-25 minutes until toothpick comes out clean.

  1. Ooh! We just got fresh blueberries today in a produce delivery. IN! I love warm muffins cut open with butter. Few things as good as that.
