Hello Friends! How is your week going? We are enjoying the warmer weather and are spending more time outside. I have been working on my little succulent and herb gardens this week. It is so fun to take care of these and know that they will be here in the coming months.
Today’s recipe is an easy one when you are looking for a quick blueberry muffin that doesn’t take a lot of time to make. I love simple recipes like this one because I can use ingredients I already have on hand and the amount of clean up is minimal. Today’s recipe is a wonderful blueberry muffin recipe that is great for any time of year!
List of main ingredients.
Blueberries – I use fresh strawberries for this recipe, but you can use frozen if you like. Be sure to clean and drain the blueberries so that they are ready for baking.
Milk – I use two-percent milk for this recipe and they always come out great. You can also use whole milk or cream if you wish.
Sugar – I find that white sugar is best for this recipe, but you can use brown sugar if you prefer. Because brown sugar contains molasses, it changes the flavor a little bit.

Blueberry Muffin Recipe
A light cake-like muffin with juicy blueberries
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg
- 1/4 cup butter, melted
- 1 cup blueberries, washed and drained
- 1 zest of one lemon
Preaheat oven to 375°
Prepare a muffin tin with baking cups or by greasing.
In a medium bowl, mix together all ingredients except for blueberries.
Once batter is blended, fold in blueberries gently.
Pour into prepared muffin tin.
Bake for 20-25 minutes until toothpick comes out clean.
