I like to change up the filling from time to time and make them with strawberries and lemon filling. This easy recipe also makes for great tea party desserts!

Hello Friends! I hope this week finds you well and enjoying the season of renewal! I have been loving all the spring decor I am seeing in stores and am loving all of the colorful flowers that are blooming.
I have a dessert recipe that celebrates the season These quick and easy hand pies are so cute.

Why This Recipe Rocks
This is one of those shortcut recipes that truly just doesn’t get any shorter. If you’ve got some friends coming over or need to make a dessert recipe for a barbecue, this is the perfect sweet treat to bring!
Fruit hand pies offer a fun hand-held dessert. These little homemade hand pies are easier to serve than on big pie and there are a couple of ways you can decorate the pies.
These are a fun take on a traditional blueberry pie and they look adorable on a serving tray for birthdays, bridal showers, baby showers and summer bbqs.

You can make it in several flavors to suit your mood or the occasion. These are perfect for a memorial day or 4th of July dessert as well. Try these Peach Hand Pies for another fun summer dessert idea.
Mini Blueberry Hand Pie Ingredients
- Prepared Pie Crust – I use a pre-made pie crust but you could use homemade pie crust.
- Blueberry pie filling – an easy way to juicy blueberry filling
- sugar
- egg
Equipment and Kitchen Tools
- rolling pin
- spoon
- large mixing bowl
- 2 1/2-3 inch biscuit cutter or round drinking glass
- sharp knife
- baking sheet or cookie sheet
- parchment paper
- rolling pastry cutter (optional)

What if I want to use fresh blueberries?
If you want to use fresh blueberries – mix 1 cup fresh blueberries with 1 tablespoon cornstarch and 1/4 cup of sugar in a small saucepan.
Cook on medium-low heat about 10 minutes, stirring often with a whisk, smashing the blueberries during the process.
Let mixture cool completely before using.
How To Make Mini Hand Pies
Step 1 – Roll pie crust and cut into circles.

Step 2- Fill pies with blueberry filling.

Step 3a- Determine how to top of each hand pie. Either top with a second round of crust, or…

Step 3b – Make little lattices with the pie crust dough and top each pie with them. Then pinch the edges of the crust in to seal.

Step 4- For either method add egg wash to the top of each pie.

Step 5 – Bake as directed.

By the way, you can also cut the pie crust into little strips and make little mini blueberry pies. It takes a little bit of time but they do come out really cute.Don’t forget to bookmark this recipe.

Easy Blueberry Hand Pies with Pillsbury Crust

Easy Blueberry Hand Pies
Ingredients
- 1 package refrigerated pie crust
- 1/4 cup blueberry pie filling
- 1/3 cup sugar
- 1 egg
Instructions
- Thaw pie crust per package directions.
- Preheat oven to 425°
- Roll out pie crust on waxed paper or lightly floured surface.
- Cut out pie crust using a 3″ glass or cookie cutter.
- Place half of the cut circles onto a parchment lined baking sheet.
- Spoon 1 – 2 teaspoons blueberry mixture onto dough circles on baking sheet.
- Top each circle with second cut out.
- Seal the outside of each pie by pressing a fork around the edge.
- Turn over each pie and seal again.
- Brush each pie with a light coat of egg wash using a pastry brush.
- Sprinkle each pie with about 1/2 teaspoon sugar.
- Bake 12-14 minutes until golden brown.
- Cool on a cooling rack before serving

Wow, these look easy and amazing! Can I tell you that when I was a kid, my mom packed the most unhealthy lunches…I am talking marshmallow fluff/PB/banana sandwiches, always with those super sweet individually wrapped hand pies. Hey, I wasn’t complaining! But these look so much better than those! Def going to try later.
