How to make these delicious pastries
This recipe uses almond paste for a great flavor combination.
1. Prep the oven and pastry
Preheat your oven to 400°F. Let the puff pastry sheets sit at room temperature and thaw according to the package instructions.
2. Grate the almond paste
Use a grater to shred 2 oz of almond paste. Set it aside for later.

3. Cut the pastry circles
Use a cookie cutter or a glass to cut out circles from the thawed pastry dough. You’ll need an even number of circles.
4. Assemble the bottoms
Place half of the pastry circles on a parchment paper-lined baking sheet. Spread Nutella on each one, then sprinkle with grated almond paste.
5. Add the tops
Cover each filled circle with a second pastry circle. Press the edges together with a fork. Cut a small slit in the top of each pastry, brush with egg wash, and sprinkle with sugar.
6. Bake
Bake the pastries in the preheated oven for 15 to 17 minutes, until they’re puffed and golden brown.

Tips for the Best Results
- Thaw the pastry dough at room temperature just until it’s easy to work with. Too warm and it’ll get sticky, too cold and it might crack.
- Roll out the sheets of dough slightly with a rolling pin if you want thinner, crispier pastry.
- A cookie cutter or the rim of a glass works great for shaping the circles. A pizza cutter can help if you want to cut equal squares instead.
- Use a pastry brush to apply your egg wash for that perfect golden finish.
- Grate the almond paste using a cheese grater so it sprinkles easily.
- Line your baking sheet with parchment paper for easy cleanup and even browning.
- Let the Nutella sit at room temperature so it spreads more easily across the pastry.
- Don’t skip the small slit on top—it helps the steam escape so your pastries stay flaky.
Substitutions and Variations
- If you don’t have almond paste, you can use marzipan, sunflower seed butter paste, cashew nut or peanut butter paste, or hazelnut or pecan paste.
- Dust with powdered sugar after baking.
- Add thin slices of sweet bananas nside each pastry.
- Make minis using a smaller cookie cutter. They’re great for parties.
- This works with homemade puff pastry if you have time, but store-bought puff pastry is the best way to keep it quick.

You have sold me! I’ve never used almond paste before but I can almost taste it. I think it would really complement the nutella, which is strong on its own, but I like something else to cut through the sweetness.
Wow, these almond nutella pastries look so yummy.
