Almost everything is better with a bit of salt. Vanilla. Real Vanilla Extract. Flour. All-Purpose Baking Soda. For leavening. Eggs. Bring your eggs to room temperature for best results. Ice Cream. Pick your favorite flavor! Chocolate Chips. Semi-sweet or Milk chocolate chips for the homemade cookie. Optional Toppings. Sprinkles, nonpareils, and mini chocolate chips can be used to coat the edges of the ice cream.

  1. Cream Butter and Sugars
  2. Add eggs and vanilla.
  3. Add flour, salt and baking soda.
  4. Add chocolate chips and bake as directed.

  • Make the amount of ice cream equitable the mouth size of your intended recipient. Don't make the ice cream too thick to eat in other words.
  • Before you start assembling the ice cream sandwiches, pair up your cookies according to size.
  • Your assembled cookie ice cream sandwiches will need at least a few hours to firm up before serving. I recommend making them at least one day in advance for best results.

Yes! You can make these up to two weeks ahead of time. Wrap them individually in parchment paper and freeze in a freezer-quality zipper bag for best results.

Can I Make a Huge Cookie Ice Cream Sandwich and cut it into wedges when I'm ready to serve?

This sounds like a really good idea at first, but cutting a frozen solid cookie and ice cream sandwich is actually much harder than it sounds. I recommend making the sandwiches in individual portion sizes as shown.

What Happens if my Cookies Are Crunchy?

Ingredients
  

  • cup unsalted butter
  • ½ cup granulated sugar
  • 1 cup brown sugar
  • 2 teaspoon vanilla extract
  • 2 eggs room temperature
  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 bag of chocolate chips 12 oz. Semi-sweet or Milk Chocolate
  • ½ gallon ice cream

Optional Toppings

  • mini chocolate chips
  • sprinkles

Instructions
 

Bake Cookies.

  • Preheat oven to 350 degrees
  • Line baking sheets with parchment paper or a silicone mat.
  • In a medium bowl, whisk together flour, baking soda, and salt.
  • In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
  • Add eggs and vanilla extract and mix until well combined.
  • Gradually add flour mixture and mix until combined. Don’t overmix though.
  • Fold in chocolate chips until well combined.
  • Divide batter using a cookie dough scoop or tablespoon and place on prepared baking sheet about 2 inches apart
  • Bake for 10-12 minutes. You want the cookies slightly underbaked for the ice cream sandwiches.
  • Remove from oven and place on wire rack to cool.

Assemble Ice Cream Sandwiches.

  • Remove ice cream from the freezer and let soften slightly.
  • Scoop ice cream and place on the bottom of 1 cookie, then top with another cookie and gently press together.
  • Dip in mini chocolate chips or sprinkles, if you like.
  • Place on a baking sheet and return to freezer until ready to serve.
  • Store leftovers in the freezer.
