Lasagna Noodles. Any brand will work. Do not get the no-boil noodles for this recipe.
Cooked Chicken. You can also use rotisserie chicken or leftover chicken.
Alfredo Sauce. You can use a homemade Alfredo sauce (see this Alfredo sauce recipe) or your favorite grocery store sauce will work.
Oregano. Adds a nice fresh touch of herbs.
Garlic Salt. Garlic salt has so much flavor. Garlic powder will work too if you don't have garlic salt.
Mozzarella cheese. The perfect cheese for melting.

How to Make Chicken Alfredo Roll-Ups

The full recipe instructions for this recipe are in the recipe card below, but here is a step by step overview of the recipe

Step 1. Boil the noodles in water on medium heat per package directions. Blot the noodles with a paper towel to remove excess water.

Step 2 Chop up the chicken and mix with mayonnaise.

Mix up the chicken, sauce, oregano, and garlic salt. Add some of the mozzarella.

Step 3 Spread this creamy chicken mixture on each lasagna noodle.

Step 4 Roll each into a tube.

Step 5. Put the rolled noodle tubes seam side down into the baking pan and cover with remaining sauce and cheese.

Step 6. Bake in the oven at 350ºF for about 25 minutes.

Tips for Best Results

Don't overcook the lasagna noodles. You want them to be al dente, or just soft enough to roll without being so soft they fall apart. They will finish softening up as they bake.

Make extra chicken when you grill, dice it up and freeze it in recipe-sized amounts so that you can throw this meal together quickly on a weeknight. Just partially thaw the chicken in the microwave, and mix it up into the recipe. Let it finish thawing and come up to temperature (165ºF) in the oven as it bakes. Use freezer-quality zipper bags to freeze the chicken.

Purchase extra rotisserie chickens when they are on sale and remove the meat from the carcass and dice. Then your shredded chicken is ready to use when you are. Store in the refrigerator for a couple of days or in the freezer.

Make Chicken Alfredo Roll-Ups ahead of time. You can prepare a pan full of the roll-ups and then freeze the pan instead of baking it. Make sure it is sealed in an air-tight container. This will keep for up to three months. Bake the chicken roll-ups from frozen or thaw the pan in the refrigerator before baking.

Freeze baked leftover chicken alfredo roll-ups in individual serving-sized containers that fit in a microwave. You will have the perfect grab-and-go lunches. Store in an airtight container, and the dish will keep in the freezer for several months.

  • 1 casserole dish or large pan
  • cooking spray or a little butter for greasing pan

Ingredients
  

  • 9 Lasagna noodles
  • 1 cup Chopped boiled chicken
  • 1.5 cup Alfredo garlic sauce
  • 1 teaspoon Oregano
  • ½ teaspoon Garlic salt
  • 1 cup Mozzarella cheese shredded

Instructions
 

  • Preheat oven to 350° F.
  • Spray the bottom of a baking dish with non-stick spray or by rubbing butter around the inside of the dish.
  • In a large bowl, mix a one cup of sauce with chopped chicken.
  • Add 1-2 tablespoon of mozzarella cheese.
  • Add oregano and garlic salt. Mix together and set aside.
  • In a large pot, cook the noodles until al dente (about 3-4 minutes)
  • Pull lasagna noodles out carefully and blot with a paper towel.
  • Put a 1 tablespoon of chicken and sauce mixture on each sheet of lasagna.
  • Roll into a tube.
  • Put in the baking dish, seam side down and repeat for all noodles.

  • Bake in the oven at 350 degrees f for about 25 minutes.

Notes

Rinse the cooked noodles in cold water after draining to avoid over cooking.
