Spinach Strawberry Feta Salad

The other day I made this Spinach Strawberry Feta Salad because I needed something light and healthy. I love strawberries and gathered some of the ingredients I had in the refrigerator to make this lovely spring salad idea.

Strawberry Spinach Salad Feta

I notice that I tend to eat more salads at the beginning of the week and think that maybe I subconsciously believe that if I start out the week on a healthy note, then I can indulge a little more towards the end of the week.

 

When you want a light salad, this Spinach Strawberry Feta Salad is great spring or summer salad! WIth mushrooms and candied pecans, it is sweet and tangy!

I have to say that this salad can be made with other berries too, I have made it with blackberries and blueberries. I think I am going to try watermelon sometime.

I like a little crunch in the salad and while many strawberry feta salad recipes contain walnuts, I like to add some chopped candied pecans to this. The slight sweetness of the berries and pecans complement the feta, mushrooms and spinach very nicely. Add a maple balsamic dressing and you have heaven in a bowl!

You can also use a bottle balsamic dressing if you wish, but it is so easy (and healthier) to make your own. I always use the bagged spinach for this recipe because it saves some time.

Main Ingredients for this recipe:

Spinach - I like to use the pre-washed and prepacked spinach to save some time. Make sure it is fresh and check expiration date if you buy the prewashed version.

Strawberries - Look for plump red berries with no spots or fuzz.

Feta- I use the crumbled variety as it is a great addition to many recipes.

Ingredients
  

  • 6 cups spinach washed and drained
  • ¾ cup strawberries
  • ½ cup mushroomms sliced
  • ½ red onion quartered
  • ¼ cup crumbled feta cheese
  • ¼ cup chopped candied pecans
  • ⅓ cup Balsamic dressing

Instructions
 

  • Place spinach in a mixing bowl.
  • Add strawberries, mushrooms, onion, feta cheese and pecans.
  • Drizzle with balsamic dressing and serve

    I love that you added raspberries too. I love apples and all berries in salads. It just delights my taste buds!

    YUM yum yum! This fits in nicely with my diet plan. I am down 4lbs in two weeks. Slow and steady wins the race for this old lady. Thanks for sharing.
