How to make these cute easter cupcakes
For Cupcakes:
Heat oven to 350 degrees F. Place cupcake papers in a cupcake pan.
Sift the flour, sugar, salt, baking soda, and powder into a large bowl, and whisk together.
Separate the eggs. In another bowl, whisk together the wet ingredients until combined. The batter will be lumpy.
Add the wet ingredients to the dry ingredients. Mix until combined.
Distribute the batter evenly into cupcake papers, filling each paper with about ⅔ the way up.
Bake cupcakes about 22 minutes, or until a toothpick inserted in the center of the cupcake comes out clean.
For Frosting:
Whip the butter and salt on low speed for about a minute using a stand mixer fitted with a paddle attachment.
Sift in the confectioner's sugar in several batches beating on low after each addition. Scrape the bowl down and repeat the process.
Add a tablespoon of the cream while mixing on low, then add the vanilla. Add in cocoa powder. Beat until you have an even, fluffy consistency.
Blend Oreos in a food processor or blender.
Frost cupcakes with chocolate icing and add oreo crumbs, carrots, sprinkles, and Peeps bunnies to the top of the cupcakes.
A toothpick can be used in the bottom of the peeps into the cupcake to help it stay in place.
