Ingredients
  

  • 2 cups Penne pasta
  • 3 tablespoons onions, chopped
  • 1 medium cucumber
  • 1/2 cup tomatoes
  • 1 bell pepper
  • 1/4 cup olive oil
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon parsley, chopped

Instructions
 

  • Boil penne pasta per package directions and drain. Set aside in a large bowl.
  • Wash all vegetables, chop and add to pasta.
  • Set Aside.
  • In a small bowl, mix together olive oil, mustard, salt, and pepper.
  • Blend completely.
  • Add olive oil to vegetables and pasta mixture coat gently.
  • Chill until ready to serve.
