Hi Friends! I hope this week finds you well! Things are heating up here and we are enjoying the longer days. We just got back from a little trip, so I am only in the mood to make some easy stovetop dinners, and today's recipe is just that.
Made with the curly Cavatappi pasta, it makes for a fun and festive dinner idea.
I do not usually cook with Cavatappi, but it was at my grocery store and I thought I would try it.
Also known as Pasta Cavatappi, this easy meal comes together in minutes and it is perfect for a weekend or weeknight dinner idea. I love using summer vegetables such as zucchini and peppers in this summer dinner idea. I like to keep it light with all of the colorful vegetables and omitting any heavy cream sauces.

Easy Cavatappi Pasta Recipe

Cavatappi Pasta
Ingredients
- 1 tablespoon olive oil
- 1 lb mild (sweet) sausage
- 1 ½ cups Cavatappi Pasta
- 2 zucchinis
- 6 mini peppers
- 1 cup Parmesan Cheese, grated
Instructions
- Bring a large pot of water to boiling.
- Add Cavatappi pasta and cook 8-10 minutes until al dente
- Wash and chop mini peppers
- Heat oil in skillet over medium heat.
- Remove sausage casing and brown in skillet, breaking up sausage into small bits.
- Once sausage is completely browned, remove from heat and set asid.
- Return skillet to medium-low heat and saute zucchini and peppers until tender.
- Add sausage and cooked pasta and heat through.
- Add Parmesan cheese and fold gently.
- Serve immediately.
