This Easy Cavatappi Pasta Parmesan recipe is one of those great dinner ideas when you need to pull something together and do not want to make a huge mess. This is truly one of the easiest quick dinner recipes and the curly pasta changes things up a bit from the usual pasta dinner.

Made with the curly Cavatappi pasta, this easy 30 minute stove top dinner makes for a fun and festive dinner idea.

Also known as Pasta Cavatappi, this easy meal comes together in minutes and it is perfect for a weekend or weeknight dinner idea.

I love using spring and summer vegetables such as spinach, zucchini and bell peppers in this summer dinner idea. I like to keep it light with all of the colorful vegetables and omitting any heavy cream sauces.

Cavatappi Parmesan Pasta Easy

Ingredients

  • olive oil
  • garlic
  • sausage
  • cavatappi noodles
  • vegetables – zucchini, mini peppers, spinach
  • Parmesan cheese
  • salt and pepper

Substitutions and Variations

  • You can sub ground beef or ground turkey for the sausage.
  • Sub rotini, bowtie pasta, elbow macaroni or a similar type of macaroni for the Cavatappi
  • Add some red pepper flakes for a pop of spice.

Equipment

  • large sauce pan
  • serving dish

Ingredients
  

  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 lb mild (sweet) sausage
  • 1 1/2 cups Cavatappi Pasta
  • 2 zucchinis
  • 6 mini peppers
  • 1 cup Parmesan Cheese, grated
  • salt and black pepper

Instructions
 

  • Bring a large pot of water to boiling.
  • Add Cavatappi pasta and cook per package directions (usually 8-10 minutes) until al dente. Set aside
  • While the pasta cooks, start the meat and vegetable preparation. Wash and chop mini peppers
  • Heat oil in a large saucepan or skillet over medium heat.
  • Remove sausage casing and brown in skillet with garlic, breaking up sausage into small bits.
  • Once sausage is completely browned, remove from heat and set aside.
  • Lower temp to medium-low heat and saute zucchini and peppers until tender.
  • Add sausage and cooked pasta back to the pan. Stir and heat through.
  • Toss gently and add Parmesan cheese. Add salt and pepper to taste.
  • Serve immediately.

Notes

Store leftovers in an airtight container.
