  • Cream cheese – I use my favorite store’s brand. It is best if it is softened and cubed before blending.
  • Cheddar cheese – You can also use a cheddar blend. Cheese should be shredded.
  • Red enchilada sauce
  • Black beans
  • Diced green chilies
  • Taco seasoning – you can use one from the grocery store or my homemade taco seasoning
  • Sliced green onions (optional)

Easy Enchilada Dip Substitutions & Variations

  • You can make this dip with ground beef in the place of chicken, just be sure to drain the ground beef before adding to the dip.
  • You can add in a half-cup of corn for a fun twist.
  • Mix in a small can of diced jalapeños for spicy kick. So good with the melty cheese!

  1. Step 1: Preheat oven. to 375°F. In a large mixing bowl, combine the cream cheese, shredded chicken, half of the cheese, enchilada sauce, black beans, green chilies, and taco seasoning.

  • Prep Ahead – Shred the cheese ahead of time and store in the refrigerator until ready to make. In fact, I usually keep a baggie of shredded cheese just for easy meal prep.
  • Soften the Cream Cheese – Make sure your cream cheese is at room temperature before you start mixing. Softened cream cheese blends so much easier with the other ingredients, for a smoother, creamier dip.
  • Make it super creamy – If you want an extra creamy dip, you can use a hand mixer to quickly beat together the ingredients.
  • Cool for a Few – After pulling it out of the oven, give it about 5 minutes to cool slightly.
  • Make it Ahead – You can assemble the dip up to a day ahead. Just cover it tightly with foil or plastic wrap and refrigerate. When ready to serve, pop it straight into the oven and bake a few extra minutes if needed.

  • 1 8 oz block Cream cheese softened and cubed
  • 3 cups Cheddar cheese, shredded halved
  • 1 10 oz. can red enchilada sauce
  • 1 15 oz. can Black beans rinsed and drained
  • 1 4 oz. can Diced green chilies
  • 1 package taco seasoning
